CHEDDAR CHEESE BALL

Covered with poppy seeds, this ebony-and-orange cheese ball makes a scrumptious Halloween party snack. Shredded extra-sharp cheddar cheese, sour cream, dry sherry, and butter are whipped in a food processor, then transferred to a large bowl to chill until firm.

Cheddar Cheese Ball image

Steps:

  • Process all ingredients except poppy seeds in a food processor until smooth. Transfer to a large bowl lined with plastic wrap. Refrigerate until firm, about 1 hour.
  • Unmold onto a plate. Press poppy seeds evenly over surface, rounding top.

1 1/4 pounds extra-sharp cheddar, shredded
1 cup sour cream
1/4 cup (1/2 stick) unsalted butter, melted
1/3 cup dry sherry
1 1/4 teaspoons coarse salt
Pinch of cayenne pepper
1/3 cup poppy seeds

  • In a large bowl, beat cream cheese, Parmesan cheese and garlic until blended. Divide into three portions. , For Pine Nut-Pesto Cheese Ball: Beat one portion of cream cheese mixture and pesto until blended. Stir in basil. Chop 2 tablespoons pine nuts; stir into cheese mixture. Shape into a ball; roll in remaining pine nuts. Wrap in plastic; chill until firm. , For Horseradish-Bacon Cheese Ball: Beat one portion of cream cheese mixture and horseradish until blended. Stir in bacon and onion. Shape into a ball. Wrap in plastic; chill until firm., For Salsa Cheese Ball: Beat one portion of cream cheese mixture, tomato paste and salt until blended. Stir in cilantro, onion and jalapeno. Shape into a ball. Wrap in plastic; chill until firm. , Can refrigerate up to two weeks. Serve with crackers.

Bacon Horseradish Cheese Balls (+ 3 Optional Holiday Designs!) image

Steps:

  • Mix the first 7 ingredients.
  • Combine with cream cheese and fold in cheddar cheese and bacon forming into balls. Roll in nuts. Refrigerate a couple hours or over night.
  • Serve with crackers or vegetables.
  • Optional Decorations:.
  • Pine-cone - Shape into a pine cone and layer almonds slices up.
  • Wreath - Mound into a circle forming a wreath, by placing a drinking glass in center of serving platter. Drop rounded tablespoonfuls of cheese mixture around glass, just touching outer edge of glass, to form ring; smooth with spatula. Remove glass. Garnish with additional parsley by pressing dried parsley into the cheese. Arrange pieces of red bell peppers in sets of three for the berries and add fresh parsley for the bow.
  • Snowman - Make 2 balls one slightly smaller then the other. Wrap in plastic and chill till firm. Spread with softened whipped cream cheese using your hand to smooth out and fluff like snow. Decorate as you would a snow man. Dill or rosemary for arms, capers for button and eyes, carrot cut to make a nose and red pepper cut for mouth, scallions for the scarf or use your imagination.
