- Put 2 slices of bread on a cutting board or work surface. Top each with two slices of cheese, the apple slices, a third slice of cheese and another piece of bread. Press down lightly.
- Heat 1 tablespoon butter in a large skillet over medium-low heat. Add the sandwiches and cook until the bread toasts and the cheese is slightly melted, 3 to 5 minutes. Flip with a spatula and add the remaining tablespoon of butter to the pan. Cook until the other side is toasted and the cheese is melted, about 3 minutes more, adjusting the heat as needed to keep the bread from burning before the cheese melts.?

- Heat the oven to 375 degrees F.
- Combine the apples, sugar, flour and 1 cup of cheese.
- Place in a greased 8-inch square baking pan.
- Combine the flour, sugar, cinnamon, and salt.
- Cut in the butter until the mixture resembles coarse crumbs then sprinkle over the apple mixture.
- Bake in the preheated oven for 30 to 35 minutes.
- Remove from the oven and top with the remaining cheese.
- Return to the oven until the cheese melts.
- Serve warm with hard sauce or ice cream.

- In an 8-inch nonstick skillet over medium heat, cook the bacon until crisp, about 5 minutes. Tear in half and set aside.
- Into the same skillet, add the brown sugar, onions and 1 tablespoon of the butter. Cook, stirring as needed, until the onions are golden, about 5 minutes. Transfer to a plate and set aside.
- Build the grilled cheese by spreading one piece of bread with the mayonnaise. Sprinkle half of the grated cheese on top, followed by the onions. Place the apple slices and bacon on top of the onions, then add the rest of the cheese. Spread the other slice of bread with the mustard and put it mustard-side down on top of the cheese. Spread the outside of the top bread slice with 1 tablespoon butter.
- Transfer the sandwich to the skillet over medium-low heat, butter-side down. Spread the top of the sandwich with the remaining tablespoon butter. Toast each side of the sandwich until golden on the outside and the cheese is melted, 3 to 4 minutes per side. Cut in half and serve.

- In a large bowl combine the dry topping ingredients. Cut in butter until crumbly. Press half of the mixture into the bottom of a 13x9 dish; reserve the rest of the crumb mixture for the top.
- In large bowl toss together the apples and other ingredients for the apples until the apples are coated evenly. Spread over the crust.

- Pour oil into wok to depth of 1 inch. Place over medium-high heat until oil registers 360°F on deep-frying thermometer. Slide 1 tortilla into oil. Using 2 slotted spoons, gently hold center of tortilla down so oil flows over edges. When tortilla is crisp and golden on bottom, carefully tilt wok, holding tortilla in place with spoon, to cover edge of tortilla with oil; cook until lightly browned. Rotate tortilla as needed so entire edge is lightly browned. Remove from oil and drain on paper towels, curled side down. Repeat with second tortilla. Tortillas can be made up to 8 hours in advance. Cover loosely and let stand at room temperature.
- Preheat oven to 350°F.

Everything's better with bacon - and that includes apple crisp! The combination of smoky, salty bacon and tart, sweet apples works surprisingly well. This works out to be mainly sweet but with some lovely savory/salty undertones. I've tried this only with regular bacon, but I'm planning to experiment with hickory smoked. Prep time does not include cooking the bacon or peeling, coring and slicing the apples.
