- Brown ground beef and season with salt & pepper. After it's browned drain the excess oil and set aside. In a crock pot put cheese, salsa and sour cream. As it starts to melt you can add the ground beef and taco seasoning. When completely melted serve with tortilla chips!

Steps:
- 1. Combine all ingredients (EXCEPT the Velveeta) in a medium size sauce pan. Simmer for 1-1/2 hours;
- 2. Melt cheese in microwave (if on stove slowly on low) and mix with ingredients that you've had simmering.
- 3. This an be kept warm in a warming pot or crock pot; if gets too thick you can thin it with beer.
- 4. Can be served with corn chips or lil smokies.
