CHEESY LOADED POTATO BITES

- Preheat the oven to 425 degrees F.
- In a large bowl, combine the potatoes, oil and salt and pepper to taste and toss to coat. Transfer to a baking sheet and roast until tender and easily pierced with a fork, 20 to 25 minutes.
- Meanwhile, combine the milk, garlic and onion powders and cayenne in a small slow cooker or pot. Add the cheese and heat on high if using a slow cooker (or over low heat if using a pot) until the cheese is melted, 15 to 20 minutes. Whisk to completely blend the mixture. Stir in three-quarters of the bacon and chives (reserve the remaining bacon and chives for garnish). Stir in the roasted potatoes and gently mix until completely coated with the cheese sauce. Top with the remaining bacon and chives. Serve hot with cocktail picks.

- Pre heat oven to 350 degree. Add the frozen potato wedges to a baking sheet and put it in the oven for 15 minutes.
- Remove the potatoes and cut them into bite sizes. Approximately 1 inches each.
- Wrap 2 inches of bacon around 2 pieces of bite sized potatoes. Then use a tooth pick to hold them together.
- Add the bacon wrapped potatoes back in the oven for 30 minutes. Turn them over after the first 15 minutes.
- Mean while, in a small serving dish spoon in the sour cream, hot sauce and minced parsley. Remove the bacon wrapped potato bites and serve.

- In a large bowl, combine potatoes, shredded cheese, bacon and green onions. Divide into eighteen 1/4-cup portions. Shape each portion around a cheese cube to cover completely, forming a ball. Refrigerate, covered, at least 30 minutes., In a shallow bowl, mix bread crumbs, Parmesan cheese, salt and pepper. Place egg in a separate shallow bowl. Dip potato balls in egg, then in crumb mixture, patting to help coating adhere., In an electric skillet or a deep-fat fryer, heat oil to 375°. Fry potato balls, a few at a time, until golden brown, about 2 minutes. Drain on paper towels.

- Preheat oven to 400 degrees. Lightly coat interior cups of 12-cup muffin tin with cooking spray. In large mixing bowl, combine shredded potatoes, eggs, and 1 cup cheese until well-blended. Divide potato mixture between 12 prepared muffin cups, pressing into bottoms and slightly up sides of cups. Divide crumbled bacon between cups, then top with remaining 1/2 cup cheese. Sprinkle sliced green onions evenly over tops. Bake 13 to 15 minutes, or until cheese is bubbling and edges of potato crusts are golden brown.

- In large bowl, mix mashed potatoes, cheese, 2 tablespoons of the chives, the bacon and 1 of the eggs with spoon until blended. Shape mixture into 1-inch balls.
- In shallow bowl, place bread crumbs. In another shallow bowl, beat remaining 5 eggs. Coat potato balls with bread crumbs, then dip into eggs and coat again with bread crumbs.
- In deep fryer or 3-quart heavy saucepan, heat 2 inches oil to 375°F. Fry potato balls, in batches, in hot oil 1 minute to 1 minute 30 seconds or until golden brown. Drain on paper towels.
- In small bowl, mix sour cream, remaining 2 tablespoons chives and the dressing mix. Serve warm potato bites with sauce.

There is just nothing better than bacon, potatoes and cheese... am I right? Ha, well at least that's how I feel when I'm in the mood for comfort food. And comfort food this is! De-lish.

- 1. Use a large pot. Saute chopped onions in butter till soft but not browned.
- 2. In a small bowl, combine flour, salt and pepper. Stir flour mixture into onion mixture.
- 3. Add milk and half and half. Stir and cook over medium heat till mixture begins to thicken (about 3 minutes).
- 4. Turn off heat.
- 5. Add 1 1/2 cups cheese to the sauce and stir till melted and smooth.
- 6. Add sliced potatoes, bacon and stir well to combine.
- 7. Pour mixture into a casserole dish sprayed with no stick spray. Cover with foil and bake at 350 for 35 minutes.
- 8. Remove foil, sprinkle reserved cheese over top and return to oven to bake another 30 minutes or until potatoes are soft, cheese is melted and edges begin to brown.
- 9. Let stand a few minutes before serving to allow sauce to thicken.

- COOK THE BACON: Spread the bacon strips out across a large rimmed baking sheet pan and place on the middle rack of a COLD oven. Set the temperature to 400 degrees. Set a timer for 16 minutes and check the bacon. Remove it from the oven when it is as crisp or crunchy as you like. I remove ours at 18 minutes and it's a great balance of chewy crunch. If you like your bacon crispy enough to crumble, you will probably want to cook it another minute past that.
- COOK THE POTATOES: While the bacon is cooking, peel and chop the potatoes. Transfer the bacon to a paper towel lined plate to drain. There should be 2-3 tablespoons of bacon grease left on the sheet pan. (If there is more than that, drain off a bit.) Put the potatoes on the pan and toss with tongs to thoroughly coat them in the bacon grease. Sprinkle with salt and pepper. Spread the potatoes out in a single layer and bake for 20 minutes, stir well and bake an additional 20 minutes. Stir again, making sure that none of the potatoes are sticking to the tray. Bake another 15 minutes.
- Chop the bacon into small pieces. Remove the potatoes from the oven, stir again and sprinkle generously with shredded cheese and chopped bacon. Return the tray to the oven and bake an additional 2-3 minutes, until the cheese has melted. Top with sliced green onions just before serving. Enjoy!

- Preheat oven at 400 degrees, and lay frozen waffle fries in a single layer. Bake as directed on package.
- Combine cream cheese and shredded cheddar until well combined. If you need to add more of either cheese, you can do so. This is a very forgiving recipe.
- Once waffle fries are cooked, remove them and place a dollop of cheese mixture on top of fries. Return to oven at 350 degrees, for 3-5 minutes or until cheese is melted.
