Steps:
- Saute ham and onion together until ham is slightly browned and the water has cooked off.
- Combine butter and can of soup over low heat. Cook until butter has melted and soup and butter have combined.
- Over low heat, add cheese and sour cream to soup/butter mixture, stirring constantly until melted.
- Put potatoes and ham/onions in a 13"x9" baking pan, pour cheesy mixture over the top. Do not stir. Cook at 350 degrees F for about 45 minutes to an hour.

- Heat oven to 375º.
- Press potatoes on the bottom and up the sides of a greased 9-inch pie plate.
- Bake for 10 minutes.
- Mix milk, eggs, and pepper in medium bowl.
- Stir in ham, 2 tablespoons green onions, and 2 tablespoons red pepper.
- Sprinkle half of the cheese over potatoes.
- Pour the egg mixture over the cheese.
- Bake for 35 to 40 minutes or until knife inserted in the center comes out clean.
- Top with remaining cheese, green onions and red pepper.
- Let stand for 10 minutes before serving or put back in oven until cheese melts.

- Melt 6 tablespoons butter and remove from heat.
- Stir in flour, salt and pepper.
- Gradually stir in milk and water and cook over medium heat until thick.
- Add cheese and stir until melted.

- Preheat the oven to 375 degrees F (190 degrees C).
- Mix 1/2 of the Cheddar cheese and 1/2 of the onions into the mashed potatoes. Spread potato mixture over the bottom and up the sides of a 2-quart casserole dish to form a shell.
- Combine ham, frozen peas and carrots, mushroom soup, mustard, garlic, and pepper in a bowl; mix well. Spoon mixture into the mashed potato shell. Cover loosely with aluminum foil.
- Bake in preheated oven for 45 minutes. Remove from oven and sprinkle remaining Cheddar cheese and onions over the top. Bake uncovered until cheese is melted, about 5 minutes. Remove and let rest for 5 to 10 minutes before serving.

CHEESY HAM CASSEROLE - WITH DEHYDRATED POTATOES
Turn dehydrated potatoes plus chopped ham into an easy, cheesy, potato scallop casserole.

- Preheat oven to 350 degrees Fahrenheit.
- Grease an 8 x 8-inch baking pan and set aside.
- Place sliced potatoes in a large bowl and cover the potatoes with boiling water. Let sit while making the cheese sauce.
- To make the cheese sauce: Melt the butter in a 2-quartsaucepan over medium-low heat. Add flour and stir to combine.
- Stir in the milk and continue stirring until sauce has thickened. Add cheese and stir until melted.
- Add the ½ cup hot water to the sauce and stir until well combined. Add black pepper to taste.
- Drain the potato slices and layer one half in the baking pan. It's ok if the slices are not fully hydrated. They will continue to get soft while baking. Top with the ham if using, and one half of the cheese sauce. Layer the remaining potato slices and top with the remaining cheese sauce.
- Cover the casserole and bake for 30 minutes. Uncover, and bake for an additional 30 minutes.
- Let sit for 5 minutes before serving.
CHEESY HAM AND SWEET POTATO CASSEROLE
Picked this up some years back at the state fair from the California Sweet Potato Council. This dish is very rich and filling and was the only way DS would eat sweet potatoes when he was young.

- Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water untill tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.
- Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. Stir in 3/4 cup of cheese and the ham.
- Pour half of mixture into greased 2 quart casserole. Arrange half of sweet potaotoes on top. Repeat layers. Bake at 350*F, 25 minutes. Sprinkle with remaining cheese and bake 3 to 4 minutes longer, or until cheese has melted.
CHEESY EGG POTATO AND HAM FRITTATA BRUNCH CASSEROLE
This makes a wonderful weekend brunch, I have made it many time in the past, it's very easy to make too! You can make this using cold cooked finely diced potatoes in place of hash browns, I have made this using leftover potatoes with great success! Feel free to add in green bell pepper, jalapeno peppers, skiced mushrooms, or whatever you wish! The skillet cooking time will take slightly longer.

- Set oven to 375 degrees (set oven rack to second-lowest position).
- Butter a 13 x 9-inch baking dish.
- Heat oil and butter in a skillet; add in frozen shredded potatoes, both onions, cayenne pepper (if using) 1 teaspoon seasoned salt and black pepper to taste; cook for about 8-10 minutes or until just very lightly browned.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 1 1/2-quart baking dish.
- Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
