CHEESY POTATO AND GREEN CHILI BREAKFAST CASSEROLE

Steps:
- Preheat oven to 350º.
- Lightly spray a 9 x 13 baking dish with cooking spray.
- Add hash browns to bottom of dish and sprinkle with salt and pepper. (If the hashbrowns are preseasoned, you can skip this step.).
- (If you are going to add cooked sausage or bacon, place it on top of the potatoes.).
- Add 1/2 of the cheese and half of the Chiles on top.
- In a separate bowl mix the eggs, water and the remaining 1/2 of the Chiles with a wire whisk. Pour over the potatoes and top with the rest of the cheese.
- Bake at 350 degrees for 45 - 55 minutes. Check the center for doneness by inserting a knife.
- Serve with salsa and tortillas.
- Another option would be to heat flour tortillas on a skillet and add a spoonful or two to a tortilla and roll it up for a breakfast burrito.

- Preheat oven to 350°F. Spray medium casserole dish (we used 9 x 13) with non-stick spray. Set aside. Brown sausage and saute onions. In a large mixing bowl, combine all ingredients, including sausage and onions. Pour into prepared casserole dish. Reserve roughly one cup of the cheese for topping. Bake for 35 minutes. Remove from oven and top with reserved cheese. Return to oven for 8 minutes. Allow casserole to rest for 15-20 minutes. Serve and enjoy!

Steps:
- Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
- Bake in the preheated oven until potatoes are soft, 50 minutes to 1 hour. Remove potatoes from oven and let cool until safe to handle, at least 15 minutes.
- Reduce oven temperature to 350 degrees F (175 degrees C). Spray a casserole dish or 9x13-inch pan with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a bowl. Saute onion in the same skillet until translucent, about 5 minutes. Transfer onion to the bowl with the cooked sausage.
- Mix eggs, half the Cheddar cheese, milk, salt, and pepper into the bowl with the sausage mixture.

- Heat heavy large skillet over medium heat. Cook sausage and onion, stirring often and breaking up the bulk sausage into small pieces. Cook until sausage is browned throughout. Drain and set aside.
- In a very large bowl, combine potatoes, eggs, Cheddar cheese, cottage cheese, Swiss cheese, garlic powder, salt, and pepper. Add cooked sausage mixture. Stir to combine well. Pour entire mixture into prepared baking dish. Can tightly cover and refrigerate overnight, if desired.
- Bake in preheated oven 50-60 minutes or until eggs are set and cheese is melted. If casserole sat in fridge all night, it may need to bake a bit longer. Watch and cover with foil if the top starts browning too much in the oven. Let stand at least 10 minutes before serving.
