It is so quick to make as a side dish and it tastes great! Wonderful with steaks. Also can be made with low-fat ingredients. Just omit the butter.

Steps:

  • Peel Potatoes and cut in bite size pieces. Boil on high heat until tender with a fork. Not falling apart mushy. Drain. Place back in pan. Combine all ingredients and let warm up making sure cheese is melted. Add garlic salt to taste. Serve!

  • Combine first 3 ingredients. Add to potatoes in large bowl; mix lightly.

  • Sprinkle with parsley.

Steps:

  • Cook potatoes and onions together in a little water until tender.
  • Drain.
  • Salt and pepper to taste.
  • Grease casserole dish with butter or something similar.
  • In casserole, place a layer (maybe an inch thick) of potatoes and onions.
  • On top of that add a layer of ranch dressing, enough to coat the top of potatoes and onions.
  • Next, put a layer of cheese on top of ranch.
  • Repeat with another layer of potatoes and onions, then ranch, and finish with layer of cheese on top.
  • Bake in 350 degree oven for 30 minutes.

My family prefers red potatoes to any other and I am constantly trying to come up with new ways to incorporate them into recipes. I put this recipe together and they raved about this dish so I thought I would post it for others to share. Enjoy!

Cheesy Red Potato Bake image

Steps:

  • Preheat oven to 350 degrees.
  • Rinse and cut potatoes into quarters.Put in saucepan with water and bring to boil and cook 10 minutes.While potatoes are cooking, cook bacon pieces with onion until bacon is browned, but does not need to be crispy.
  • Drain potatoes and in a large mixing bowl, add the bacon, onion and the bacon grease to the potatoes.Add all spices and toss to coat then add the cheese and toss again.
  • Place potatoes in a baking dish and bake for 30 minutes or until potatoes are fork tender.
  • Remove and cool 5 minutes before serving -- my family was too eager and burned their mouths on the spuds right out of the oven.
  • Hope you enjoy them as much as we did!
  • Note: You can substitute Mrs Dash for the salt with good results.

8 medium red potatoes
6 slices bacon, cut into small pieces before frying
1/2 cup diced onion
1 cup grated sharp cheddar cheese
1/2 cup grated monterey jack cheese

  • Place potatoes in a large saucepan over medium heat, and cover with water. Bring to a boil, and cook 10 minutes, or until tender; drain.
  • Place cooked potatoes on an ungreased cookie sheet with the cut side up. Spread a spoonful of dressing on the top of each potato half. Sprinkle with cheese, and lightly dust with pepper.

Steps:

  • Wash and pierce potatoes in several places with a fork. Microwave on high 10 minutes until tender. Set aside to cool slightly.
  • Preheat oven to 350 degrees. Grease an 11 x 7 inch baking pan.
  • Combine cream cheese and sour cream in a large bowl; beat until smooth.
  • Add yellow onion, half of the cheese, half of the bacon bits and salt. Mix well.
  • When potatoes are cool enough to handle, cut in half. Scoop out pulp and mash potatoes.
  • Then add to the cream cheese mixture. Beat with a mixer. Stir in milk, dry ranch dressing mix, and mix well.
  • Spread potato mixture in prepared pan. Bake uncovered 30 minutes. Remove from oven, sprinkle with remaining cheese, bacon pieces, and green onions.
  • Bake 5 minutes longer, or until cheese melts.

4 large russet potatoes

1/4 cup sour cream

  • Cut potatoes into 1″ to 1 1/2″ pieces. Fill a 5 Qt pot half full with salted warm water (about 7 cups water and 1 tsp salt). Add potatoes and bring to a boil then cook at a low boil for 8-12 min depending on size of potatoes (they should be nearly done and should be fairly easy to pierce with a fork) Drain well.
  • Drizzle 1/2 cup ranch dressing directly into the pot with drained potatoes and gently toss - just enough to coat evenly.
  • Transfer potatoes into greased casserole dish. Sprinkle potatoes with garlic salt to taste. Bake uncovered at 400˚F for 20-25 minutes. Remove casserole from oven and set oven to broil.
  • Sprinkle the top with 1 cup Mexican cheese blend, return to oven and broil for 2-3 min or until cheese is melted. It's perfectly ok to add more garlic salt at the end if you under-seasoned it the first time (speaking from experience). Garnish with chopped chives or green onion if desired.
