YUMMY CHEESE FRIES
Easy and fast, these Cheddar cheese fries are served with bacon and dipped in ranch dressing.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
- Preheat oven to 400 degrees F (205 degrees C). Place a piece of aluminum foil over a baking sheet; spread fries in a single layer on baking sheet.
- Bake in preheated oven until golden brown and crisp, 15 to 20 minutes.
- Preheat broiler.
- Sprinkle fries with cheese and crumbled bacon.
- Broil until cheese is melted, 1 to 2 minutes. Serve with Ranch dressing.

- Bake 4 cups curly fries as the label directs. Meanwhile, make the cheese sauce: Melt 1 stick butter in a saucepan over medium-high heat. Sprinkle in 1/4 cup flour and whisk until smooth, 2 minutes. Gradually whisk in 1 cup milk and a pinch of nutmeg; whisk until smooth, 3 minutes. Add 8 ounces cubed Velveeta cheese and whisk until melted, about 5 minutes. Whisk in 1/4 cup lager beer or chicken broth, 1 teaspoon hot sauce and 1/2 teaspoon kosher salt. Add the fries and toss.
SEASONED FRIES WITH CHEESE SAUCE

- Toss half a 28-ounce bag frozen crinkle-cut fries with 1 tablespoon olive oil and 1/4 teaspoon each kosher salt, pepper, garlic powder, onion powder and paprika. Spread on a baking sheet and bake at 425˚ until crisp, about 30 minutes. Heat 1/2 cup half-and-half in a saucepan over medium heat until steaming; add 4 ounces diced sharp cheddar cheese and 2 diced slices American cheese. Cook, whisking, until smooth. Whisk in 1/2 teaspoon Worcestershire sauce. Season with salt and pepper. Serve with the fries.
HERB AND CHEESE OVEN FRIES

- Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
- Cook the bacon in a large cast iron skillet over medium heat until crisp, about 4 to 5 minutes. Transfer to a paper towel-lined plate. Pour all but 1 tablespoon of the bacon drippings into a small bowl and set aside. Add the onion and cook, stirring, until golden brown, about 8 minutes. Transfer to a bowl.
- Wipe out the skillet and return to medium-high heat. Heat the remaining bacon fat and 2 tablespoons vegetable oil in the skillet. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on 1 side, about 4 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, about 6 minutes or until well browned. - Have your GH (Grown Helper) put fries in oven on a cookie sheet. While fries are baking in the oven, have a GH place a sauce pot on the stove and heat it over medium heat. Add butter and melt it. Add the flour and stir. Cook butter and flour together for 1 minute or so. This is called "roux" (like Tiger and Roo with Pooh Bear) and it helps to thicken up sauces. Use a whisk to stir as the milk goes into the pot. Keep stirring until the milk gets thicker. Use a wooden spoon or heat-safe spatula to stir in the cheese. When all of the cheese melts, take the sauce off the heat and stir in 3 squirts of ketchup. This is your SECRET ingredient. When everyone asks what you put in your cheese sauce that makes it taste so good, just say milk and cheese, you can NEVER tell what secret ingredients you add! Tell your GH to keep the secret, too or they can never help you again!
- Pour the sauce over the fries or serve the sauce on the side if you like to dipping better.
BRIT'S CHEESY ONION HOME FRIES
This twist on a breakfast favorite comes from my daughter Brittany, who is a cheese and onion lover. Great for lunch and as a dinner side also!

Steps:
- Microwave potatoes as you would for a baked potato, but cook until*slightly* underdone- 4 take 12-14 minutes on my microwave (or use leftover baked/cooked potatoes).
- When cool enough to handle, quarter potatoes and then cut into about 1 inch pieces (we leave the skins on).
- Heat 2 tbl of butter or oil in a large non-stick skillet (or if you just cooked bacon in the pan, you can reserve some of the bacon grease and use that to fry in).
- On medium heat, add onions and cook until 1 or 2 minutes before adding potatoes, salt and pepper, stirring to combine.
- Let cook for a few minutes, flipping or stirring gently, until onions are tender and potatoes are to desired crispness.
- If necessary, add additional butter or oil to prevent sticking.
- Remove home fries from pan and transfer into microwavable casserole dish.
- Sprinkle with one cup of cheese and fold in gently.
- Sprinkle remaining cup of cheese on top and microwave for 1 to 2 minutes until cheese is melted.
- Sprinkle a bit of parsley on top, if desired.
QUICK & CRISPY HOME FRIES

- Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
- Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.
- As potatoes brown, toss them and keep turning them every few minutes until they are crusty and crispy-edged and a rich reddish-brown color, 10 to 12 minutes. If potatoes seem to be cooking too quickly, reduce heat to medium. Serve topped with chopped chives.
