Steps:
- In a large nonstick skillet, heat the oil over medium heat. Add the sausage and cook, stirring and breaking it up into smaller pieces, until it begins to brown, 3 to 5 minutes. Add the onion and bell pepper and cook until the onion is golden, about 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Remove from the heat to cool slightly.
- Meanwhile, whisk together the eggs, milk, sage and parsley in a large bowl. Add the cubed bread, sausage-vegetable mixture and 1/4 cup of the cheese. Season with salt and pepper. Stir to combine. Cover and refrigerate for at least 30 minutes or overnight.
- Preheat the oven to 350 degrees F. Brush a medium casserole dish with oil. Pour the chilled bread mixture into the prepared casserole dish. Sprinkle with the remaining 1/4 cup of cheese. Let sit at room temperature for 20 minutes.
- Transfer the casserole to the oven and bake until puffed and golden brown, about 30 minutes. (If the top of the casserole starts to get too brown, cover it with aluminum foil.) Remove to a rack to cool slightly. Serve hot or warm.

- Preheat the oven to 375 degrees F.
- In a 10-inch cast-iron skillet over medium heat, cook the sausage until browned and the fat is rendered, about 10 minutes, breaking up the chunks of sausage with the back of a wooden spoon. Remove the sausage to a bowl and set aside.
- Add 2 cups of the milk and 2 cups water to the skillet and bring to a boil. Whisk in the grits slowly until smooth and no lumps remain. Reduce the heat and continue to cook, whisking, until very thick, about 5 minutes. Remove from the heat and stir in about half of the grated cheese.
- In a medium bowl, whisk together the eggs with the hot sauce and remaining 1 cup milk. Slowly stream the egg mixture into the skillet with the grits while continuously whisking. Fold in the cooked sausage, scallions and jalapeno and season with salt and pepper. Top with the remaining cheese and bake until a knife inserted in the center comes out mostly clean, 50 minutes to 1 hour.
- Slice the reserved scallion tops and sprinkle on top just before serving.

- Cut sausage into small bite sized pieces. Fry with onion and garlic until completely cooked.
- Meanwhile, cook pasta with a pinch of salt until fully cooked.

I had a half a pound of smoked sausage and didn't want to just fry and serve it up. I did a bit of " Freezer Diving " ;) and found a bag of cauliflower. So, I combined that with the smoked sausage, a few extras, and a cheese sauce and this is what I came up with. :)If you wanted to, you can cook about 1/8th. to 1/4th cup of finely chopped onion with the sausage. And to make this a One- Dish meal, just add some frozen peas. I want to thank Chef#64642 ( Molly53 ) and Chef#546010 ( Chicagoland du Jour ) for coming up with the name for this recipe.I know that this looks complicated, but it's really easy to make.Submitted to Food.com ( a.k.a.
