SPINACH, BACON AND MUSHROOM QUICHE

This is a dish you'll be happy to serve at any meal of the day - be it breakfast, lunch, or a light dinner with soup and/or salad. A delicious combination using ingredients from RSC #6.

Spinach, Bacon and Mushroom Quiche image

Steps:

  • Preheat oven to 375°F.
  • Sprinkle bottom of pastry-lined quiche/tart pan or pie plate with 1 tbsp dry breadcrumbs (this will absorb any excess moisture).
  • Place bacon in a large skillet; cook over medium high heat until evenly brown; remove with slotted spoon and drain on paper toweling; set aside.
  • With 2 tbsp of the bacon fat, sauté onion and mushrooms until all the liquid released by the mushrooms has evaporated; add spinach and cook 1-2 minutes, just until spinach wilts; add reserved bacon, coriander and nutmeg and season lightly (remember there will be salt in the cheese); place in pastry and top with 1 1/2 cups cheddar cheese.
  • Beat together cream cheese, eggs and milk; season to taste; carefully pour over quiche and gently shake quiche to distribute custard.
  • Bake in preheated oven for 40-50 minutes, or until quiche is golden-brown, sprinkling with 1/2 cup of cheese 10 minutes before quiche is done (put the quiche directly on the oven floor for the last 10-15 minutes of baking to crisp up the crust); cool for 10-15 minutes before serving.

1 pie pastry (for a 10-inch quiche or tart pan or 9-inch pie plate)
1 tablespoon dry breadcrumbs
8 ounces bacon, cut into 1/2 inch pieces
1 medium onion, minced
2 cups chopped portabella mushrooms
2 cups chopped fresh spinach, packed (very well dried)
1/2 teaspoon ground coriander
1/4 teaspoon ground nutmeg
2 cups grated cheddar cheese, divided use
6 ounces cream cheese
4 eggs
1 cup milk

WILD & CREAMY MUSHROOM SOUP (JOEY'S RESTAURANT)

This is the must-try mushroom soup that you can find at Joey's Restaurants up here in the Northwest. It's my all-time favorite mushroom soup, and I think that is because of the sherry that is added. When I saw a note in their menu that this recipe was featured in a magazine a couple of years ago, I had to find it. Enjoy!

Wild & Creamy Mushroom Soup (Joey's Restaurant) image

Steps:

  • Grind dried porcini in a blender until powderly.
  • Cook onion in 1 T butter in a 4 to 5 quart heavy pot, covered, over moderate heat, until softened, about 5 minutes.
  • Add Fresh mushrooms, porcini powder, seal salt, tarragon oregano, and pepper and cook, stirring occasionally, until mushrooms are tender, about 5 minutes.
  • Add remaining 2T butter and cook, stirring, until melted, then sprinkle in flour and cook, stirring constantly, until mixture is very thick and golden, about 5 minutes.
  • Whisk in 1 C chick broth, scraping up any brown bits, until mixture is smooth.
  • Add remaining broth in a stream, whisking until liquid is smooth.
  • Bring to a simmer, whisking, then stir in cream and Sherry and simmer, uncovered, stirring occasionally 10 minutes.

1/4 ounce dried porcini mushrooms

For best flavour use overripe banana's. can be made with ice cream maker or without. Cooking time included chill time.

Banana Sorbet - Dairy Free image

Steps:

  • Mash bananas until smooth, stir in lemon juice.
  • In a small saucepan, bring water and sugar to a boil over high heat; reduce heat to medium and simmer for 2 minutes, until slightly thickened. Let cool to room temperature. (to speed up cooling of syrup place in fridge for 40 - 45 minutes.).
  • Stir cooled syrop into banana puree.
  • Freeze in ice cream maker according to manufacturers directions.
  • OR.
  • Place in a shallow pan covered with plastic wrap for at least 4 hours.

CHEF JOEY'S SPANAKOPITA CASSEROLE (DAIRY FREE)

This casserole has a bit more in it then just spinach. All the greens are organic and came out of our garden so this should taste really fresh. I don't use dairy so I used Vegan Monterrey Jack cheese, but you can use whatever you kind you like. Make sure you totally cool the greens mixture before adding it to the cheese and eggs, you don't want to scramble the eggs!!

Chef Joey's Spanakopita Casserole (Dairy Free) image

Steps:

  • Remove the puff pastry from its package and let it thaw for at least 40 minutes.
  • Cut up your potato and add enough water to cover. Boil until fork tender.
  • In the mean time, melt the coconut oil in a large saute pan.
  • Saute the onion for a few minutes, then add the shallots and garlic, saute until all are transparent.
  • Add the cleaned spinach, kale and nettles. I found I had to add them a little at a time to the saute pan because there was so much.
  • Add the chicken broth into the saute pan as you add the greens. When the greens mixture is totally cooked remove from the saute pan and set aside to cool. The chicken broth should have reduced down considerably. Don't use the liquid if there is any left, just discard it or use it in something else.
  • Shred the cheese and add the eggs and combine well and set aside.
  • Check the puff pastry to see if its thawed out enough to roll. If it is, take one of the sheets and roll it out to fit into a 9x9" casserole dish. Make sure you get all the air bubbles out from under it while placing it in the casserole dish.
  • Combine the cooled greens/onion/garlic mixture in the cheese and egg mixture. You might want to stick this in the freezer for 5 minutes to help it cool faster. Don't forget its in there, you don't want it to freeze.
  • Add a little more coconut oil to the saute pan and saute the mushrooms until they get soft, then add the liquid smoke. Mix it up a little more.
  • Remove the greens from the freezer if they're still in there.
  • Layer the mushrooms on the bottom of the casserole first. Then the greens/onion/garlic mixture. Then the potatoes that you cooked.
  • Salt and pepper the potatoes.
  • The 9 x 9" casserole dish should be full to the top. Fold the sides of the puff pastry over on top of the potatoes and add the top piece of puff pastry tucking the sides inches This will keep the juices inches You don't have to roll out the top piece of pastry, it should fit perfectly on the top of the casserole.
  • Brush the top of the pastry with beaten egg if you wish. It makes the top look nice and golden brown.
  • Bake in a 350'F oven for 40 minutes.
  • When you take the casserole out the top will probably be puffed up. Just let it sit and cool on a wire rack, the top will drop down.
  • Serve hot.

Leek and Mushroom Quiche image

Steps:

  • Preheat oven to 375.
  • In a 9 inch pie pan or quiche dish arrange the pie crust, poke small holes with a fork, so you don't get air bubbles.
  • In a med size pan, over med heat add your leeks and mushrooms cook until tender.
  • In a mixing bowl whisk the eggs, milk, and the salt and pepper.
  • Add the leek and mushrooms to your pie pan, then add the eggs and the cheese on top.
  • Cook for 30 to 40 minutes until center comes clean.
  • Let rest for 10 minutes before serving. Enjoy! this can be doubled.

1 already made pie crust
4 eggs
1/4 cup milk
2 leeks, chopped
1 tablespoon butter
3/4 cup swiss cheese, shredded

I love pound cake. It has been a favorite with me since I was a small child. But, I don't like all the calories most of them have, so I've come up with this and as you can see from the photos it turned out great. The taste is really nice and I love the hint of lemon that shines through this recipe. This would be delicious with your favorite syrup, fresh fruit or a dollop of non-dairy whipping cream...Yum!

Chef Joey's Dairy Free Pound Cake image

Steps:

  • Zest the lemons and set aside. Do this before juicing as its easier.
  • Set oven to 325'F.
  • Grease a 16 cup tube pan. Dust with flour by swirling it around the bottom and sides. Then flour the tube as well. Tap out the excess.
  • Sift the spelt, baking powder and salt together in a medium bowl and set aside.
  • In the bowl of a stand mixer cream the margarine until it's light and fluffy.
  • Add in the sifted sugar and beat for about 5 minutes making sure the sugar is well incorporated.
  • Add the egg replacer in 1/4 cup increments until all added and make sure this is well mixed.
  • Beat in the lemon zest and juice.
  • With a good rubber spatula add in the sifted dry ingredients until well mixed.
  • Mix in the vegan sour cream.
  • Put the batter into your prepared tube cake pan.
  • Bake for about 1 1/2 hours. Using a wooden kabob skewer test for done-ness. I stuck the skewer a few times near the middle as this is the thickest part. If it comes out clean then the cake is done.
  • Cool on a metal rack for 15-20 minutes. Then run a knife around the outside of the cake.
  • Turn the cake onto the metal cooling rack and then put it right side up. Let the cake cool completely.
  • You can make this a few days ahead.
  • Wrap in tin foil and store in the fridge.
  • Remove what you're going to eat before serving and let come to room temperature.
  • Bon Appetit!
