CHERRY-CHEESE MOLD
Cherries and honey-roasted almonds add a subtle sweet flavor to a spread featuring three cheeses.

Steps:
- In food processor, place cheeses, onion and liqueur. Cover; process until smooth and well mixed; spoon into large bowl. Chop 3/4 cup of the cherries. Reserve remaining 1/4 cup cherries and 2 tablespoons of the almonds. Stir chopped cherries and remaining almonds into cheese mixture until well mixed and mixture is pink.
- Line 3-cup bowl or heart-shaped mold with double layer of cheesecloth. Spoon cheese mixture into mold. Cover; refrigerate at least 1 hour but no longer than 24 hours.
- Unmold cheese mixture onto serving plate. Cut reserved cherries in half. Garnish top of cheese mold with halved cherries and reserved almonds. Serve with mini toasts.

CHERRY AMARETTO CHEESE MOLD
Wilton's heat pan is great for Valentine's or Anniversary, but use other molds for any time. There is no time of year this is not good. Mom passed this down and I don't know original date it ran in the newspaper.

Steps:
- Mix gelatin and sugar in small saucepan; stir in 1 1/2 cups milk. Stir over medium heat until gelatin dissolves completely. Remove from heat.
- Drain 1 can cherry pie filling, reserving syrup, Cover and refrigerate cherries for garnish. Blend remaining cherries, reserved cherry syrup and cream cheese in good processor or blender until smooth. Pour into large bowl, beating in remaining milk, liqueur and gelatin mixture until smooth. Refrigerate until slightly thickened
- Fold 2 cups whipped topping into gelatin mixture. Spread into lightly greased pan. Refrigerate until firm, at least 4 hours. Run tip of small knife around top edge of gelatin mixture; dip mold in war water, just up to top edge of mold, for 10 seconds to loosen. Place large serving plate over mold and carefully invert to unmold. Garnish with remaining whipped topping, drained cherries and almonds.

- In a large bowl, combine the cracker crumbs, butter and sugar. Press onto the bottom and 1 in. up the sides of a greased 9-in. springform pan., In a large bowl, beat cream cheese and sugar until smooth. Beat in the Amaretto, extracts and salt. Add eggs; beat on low speed just until combined. Pour into crust. Place pan on a baking sheet., Bake at 325° until center is almost set, 55-60 minutes. Let stand for 5 minutes. Combine the sour cream, sugar and almond extract; spread over top of cheesecake. Bake 5 minutes longer., Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan.

LIGHT CHERRY AMARETTO CHEESECAKE ICE CREAM
This is a lightly sweet mild cheesecake-flavored ice cream with all the richness, but with less fat. Cook time includes the time it takes for the ice cream machine to freeze the mixture, but does not include chill time. Thank you to 2Bleu for putting this in her best of 2009 cookbook!

- In a small bowl, add 2 tablespoons sugar to beaten egg yolks. Whisk well.
- In a medium pot, combine remaining 4 tablespoons sugar with milk, and bring almost to a simmer over high to medium-high heat.
- Scoop out a small amount of hot milk to temper the egg yolks (about ¼ cup); slowly whisk into egg yolks. Repeat this one more time.
- Add egg mixture to pot of hot milk and whisk thoroughly. Cook, stirring constantly, over medium to medium low heat until thickens and coats the back of a spoon, about 3-5 minutes. Do not let mixture boil. Remove from heat.
- In a large mixing bowl (an electric mixer works best), beat cream cheese and mascarpone until well whipped. Add jam, lemon juice, extracts, and Amaretto, and beat to combine. On low speed, gradually beat in hot milk mixture. Cream cheese will not be completely dissolved/smooth - that is OK.
- Let mixture cool before chilling in the refrigerator. This takes about 10 minutes if you place the container in a bowl filled with ice and cold water. Chill in the refrigerator for at least 3 hours.
- Stir mixture to re-combine and freeze in an ice cream machine, according to manufacturer's directions. In the last minute or two of freezing, add the graham cracker pieces.
- Serve immediately or freeze for 1-4 hours, if a firmer consistency is desired. Top with cherries (and almonds, if using) and enjoy! This is best eaten the same day you make it.

- Drain cherries, reserving 1/4 cup juice. Place cherries in a 3-qt. slow cooker., In a small bowl, mix sugar, cornstarch and salt; stir in reserved juice until smooth. Stir into cherries. Cook, covered, on high 7 hours. Drizzle amaretto over cherry mixture., For dumplings, in a small bowl, whisk flour, sugar, baking powder, lemon zest and salt. In another bowl, whisk milk and melted butter. Add to flour mixture; stir just until moistened., Drop by tablespoonfuls on top of hot cherry mixture. Cook, covered, 45 minutes or until a toothpick inserted in center of dumplings comes out clean. If desired, serve warm with ice cream.
