- Put water, oats, salt and cherries into a medium sized saucepan. Bring to a boil, reduce the heat and simmer for about 5 minutes for Old Fashioned Oats, or 1 minute for Quick Cooking Oats. Remove from heat. Stir in the vanilla extract and cherry jam. Put into serving bowls and pour 2 tablespoons of milk over each bowl.

- In a large bowl, combine the first nine ingredients. In another bowl, combine the butter, honey, eggs and vanilla. Stir into oat mixture until combined. Set aside 1-1/3 cups for topping., Press remaining oat mixture into a greased 13-in. x 9-in. baking pan. Combine preserves and dried cherries; spread over crust. Sprinkle with coconut and reserved oat mixture; press down lightly., Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars.

- The night before you plan to make this dish, place the oatmeal in a large microwave-safe bowl or in a saucepan with the salt. Bring the water to a boil, and pour over the oatmeal. Cover tightly and leave overnight.
- In the morning, stir in the honey, pistachios and cherries. Cover and microwave three to five minutes, or simmer for 10 minutes or so until the oatmeal has absorbed the liquid remaining in the bowl. Stir in milk or almond beverage as desired.
