CARAMEL SAUCE

- Put the cream in a saucepan and bring to the boil. Set aside.
- Combine the sugar and water in a saucepan and bring to the boil. Use a brush dipped in cold water and brush the inside of the saucepan, brushing just about the level of the simmering sauce. Cook over high heat until the mixture is golden brown. Remove from the heat and slowly whisk in the reserved cream. Return to the boil and cook over low heat for two to three minutes. Stir in the vanilla.

CREAMY CARAMEL SAUCE
Caramel sauce is perhaps the most versatile incarnation of caramel. Besides being both a hot and cold sauce, it makes a great filling for tarts and other pastries. It is also a major ingredient in some of my other recipes, such as truffles that I make with Caramel Ganache and Caramel Souffle. I always keep a variety of caramel blends refrigerated in my bakeshop. They last for weeks and are ready at a moment's notice to fulfill the inevitable special request. When I make creamy and clear caramels that have liquid added to them, I take the caramel to a high temperature, because I want a more, intense flavor that won't be diluted when the caramel is stretched. For example, you'll be heating the sugar to 375 degrees F in this recipe and you'll want to watch it carefully so it doesn't burn. Adding any liquid to hot caramel will cause it to bubble up like an eruption of molten lava. Using a pot that is at least twice the volume of the ingredients will prevent boil-over. Heating the liquid first reduces the volatility of this reaction but does not eliminate it, so be prepared. Oven mitts and a long-handled whisk are helpful, and don't stick your head or arms directly over the pot. It is important to remember that the steam rising out of a pot of hot caramel is as hot as the caramel inside, and nothing is as painful as a steam burn. Creme fraiche adds the perfect balance to this sauce, taming the sweetness with a touch of acidity. If you can't find it, and don't have time to make it, sour cream is a good substitute. I also balance the flavor of this sauce with a second addition of sugar and a little lemon juice at the very end. This adds another subtle dimension of flavor.

- Heat a saucepan of water and place a whisk in it.
- Wash and dry your hands thoroughly. Combine the water, 1 cup of sugar, and the corn syrup in a medium saucepan. Stir them together with very clean fingers, making sure no lumps of dry sugar remain. Brush down the insides of the pan with a little water, using your hand to feel for any stray granules of sugar.
- Cover the saucepan and place it over medium heat for 4 minutes. After 4 minutes, remove the lid, increase the heat to high, and bring to a boil. Do not stir from this point on. Keep an eye on the pan. It will be very bubbly. When stray sugar crystals appear on the side of the pan, brush them down with a wet pastry brush.
- As the sugar cooks, the bubbles will get larger. Insert a candy thermometer, and when the temperature reaches 300 degrees F, lower the heat to medium, which will slow the cooking. Continue to cook the sugar until it reaches 350 degrees F. It will be dark brown. Remove the pot from the heat and let it sit for 1 minute, or until the bubbles subside.
- Add the cream to the caramel. It will bubble up vigorously, so be careful.
- Vigorously whisk in the remaining 1 tablespoon sugar, creme fraiche, lemon juice, and salt. This sauce is now ready to be served warm or cooled to room temperature. It will keep stored airtight in the refrigerator for up to 1 month. When cold, it has the consistency of peanut butter.
SOUR-CHERRY SAUCE

- Place the cherries, sugar and cinnamon in a medium-size saucepan over medium heat. Simmer, stirring occasionally, for 10 minutes. Stir in the vinegar. Place the cornstarch in a small bowl and stir in the water until smooth. Add to the sauce and cook until sauce begins to thicken, about 2 minutes longer. Strain. Serve over vanilla ice cream, poundcake or poached pears.

BEST EVER HOT CARAMEL SAUCE
We love this yummy sauce best over vanilla ice cream, but it's also great on hot apple pie! My kids pick Hot Caramel Sundaes over birthday cake every year! This sauce makes great teacher and/or Christmas gifts (pour in 1/2 pint jars and tie with festive ribbon). Remind them it needs to be refrigerated!

- Melt butter in heavy saucepan over low heat. Add milk and sugars. Bring to a rolling boil over medium heat stirring constantly. Boil 1 minute.
- Cool slightly.
- Pour into blender, add vanilla, and cover and blend on medium until smooth. Serve over vanilla ice cream. Store covered in refrigerator up to 2 weeks (It never lasts that long at our house!).

CARAMEL SAUCE
Making homemade caramel sauce is daunting for many cooks, but there's no reason to be intimidated. It's simple to prepare and takes only 15 minutes.

- Combine the sugar and salt in a 3- to 3½-quart stainless steel saucepan and pour the water over them. Place the pan over medium to medium-high heat, stirring gently with a wooden spoon. As soon as the mixture comes to a boil, stop stirring.
- Cook the mixture for 5 to 6 minutes, gently swirling the pan to "stir" the caramel so it colors evenly. As soon as the mixture turns a medium amber color, remove the saucepan from the heat and add the cream all at once. Stir well, and don't be concerned if it clumps up at first; it will smooth out.
- Put the saucepan back over medium-low heat and boil, stirring virtually nonstop, until the caramel reaches 220 to 225°F (104 to 107°C) on a candy thermometer. Remove from the heat and stir in the vanilla. Cool briefly, then transfer to heatproof jars to store. Cool to room temperature before refrigerating. It will keep for at least several weeks. To reheat, microwave the jar in 5- to 10-second intervals, stirring in between, until pourable.
CHERRY SAUCE
Served warm, this cherry sauce makes a wonderful topping for sponge cake, pound cake or ice cream. You could also try it as a filling for crepes or blintzes.

CHERRY CARAMEL SAUCE RECIPE

- Combine the whole cherries and 1/4 C of the water in a medium saucepan. Bring to a simmer over medium heat and mash around for awhile, a good 20 minutes, until the cherries have yielded their juice and the fruit has softened. Strain into a medium bowl; strain out just the pits for a fruit-filled sauce, or strain out all the solids if you are a creamy peanut butter type of person. Stir in the orange juice and pinch of salt. In a small saucepan combine the sugar and remaining 1/4 C water. Bring to a boil over high heat, watching carefully until the mixture caramelizes and takes on a rich amber color. Remove from heat immediately. Stir in the butter (carefully, it will sputter), then stir into the cherry mixture. Chill until needed, up to a week. Makes about 1 pint.
