Dark sweet cherries, red wine, brown sugar, Dijon mustard and orange juice concentrate become a delicious glaze and sauce for baked holiday ham.

Steps:
- Drain cherries, reserving syrup. Combine the cherry syrup, wine, sugar, 2 Tbsp. of the mustard, the cornstarch and juice concentrate in small saucepan. Cook on medium-high heat until mixture thickens and starts to boil, stirring constantly. Remove 1/3 cup of the sauce; reserve for later use. Stir cherries into remaining sauce; cover. Refrigerate until ready to use.
- Brush ham with remaining 1/4 cup mustard.
- Bake ham as directed on package, brushing occasionally with the reserved 1/3 cup sauce for the last 30 min. of the baking time. Meanwhile, cook cherry sauce on medium-low heat until heated through, stirring occasionally. Carve ham. Serve ham slices topped with the warm cherry sauce.

BAKED HAM WITH SPICED CHERRY GLAZE

- Preheat the oven to 350 degrees F. Line a roasting pan with foil and spray it with nonstick spray.
- Score the top and sides of the ham with a small sharp knife in a crisscross pattern. Put the ham in the pan, pour 1/2 cup water or white wine into the bottom of the pan and bake, covered loosely with a tent of foil, 45 to 60 minutes.
- To make the glaze, combine the preserves, horseradish, brown sugar, cinnamon, cumin, cardamom, salt, and lemon juice in a medium bowl. Transfer the cherry mixture to a small saucepan and bring to a boil over medium heat. Boil until the glaze is slightly thickened, 2 to 3 minutes. Remove from the heat; stir in the lemon zest.
- Remove the ham from the oven and brush the top with 1/4 cup of the glaze. Bake, uncovered, until the ham is hot and an instant-read thermometer inserted into the center registers 140 degrees F, about 20 minutes longer. Remove the ham from the oven to a cutting board and let stand 10 minutes before slicing. Arrange the sliced ham on a serving platter and serve with the reserved glaze.
OLD FASHIONED GLAZED HAM

- Preheat the oven to 350 degrees F. Put oven rack in the middle of the oven.
- In a small bowl, mix together the Dijon mustard, brown sugar, and thyme.
- Put the ham in a large roasting pan, fat side up. Rub the ham with mustard glaze. Pour the pineapple juice into the bottom of the pan. Put the ham in the oven and bake for 2 hours, brushing every 20 minutes with the pineapple juice. Remove the ham from the oven.
- Turn oven to 400 degrees F.
- Using toothpicks, decoratively adhere the pineapple rings around the ham and put a cherry in the center of the pineapple ring. Sprinkle the pineapple rings lightly with brown sugar. Return to the oven, uncovered, and bake until the pineapples turn a light golden brown. Remove from the oven to a serving platter and let rest for 15 minutes before slicing.
DR. PEPPER-GLAZED HAM
This recipe is from Cook's Country. I have never tried a recipe from them that is not "perfect"!

- Bring Dr. Pepper, sugar, orange juice, and mustard to boil in medium saucepan. Reduce heat to medium-low and simmer until mixture is syrupy and measures 3/4 cup, about 10 minutes. (Glaze can be refrigerated for several days; reheat when needed.).
- Remove ham from packaging and discard plastic disk that covers bone. Place ham in plastic oven bag, tie bag shut. Set ham cut side down in 13 by 9-inch baking dish and cut 4 slits in top of bag. Let stand at room temperature for 1 1/2 hours.
- Heat oven to 250 degrees. Bake ham until center registers about 100 degrees on instant-read thermometer, 1 1/2 to 2 1/2 hours (about 14 minutes per pound) , depending on weight of ham.
- Remove ham from oven and roll back sides of bag to expose ham. Brush ham liberally with glaze and return to oven briefly until glaze becomes sticky, about 10 minutes. Remove from oven, brush entire ham again with glaze, loosely cover with foil, and let rest for 30 to 40 minutes before carving.

- Place ham on a rack in large roasting pan. Bake, uncovered, at 325° for 3 hours., In a small saucepan, combine the brown sugar, cornstarch and mustard. Stir in cherry juice until smooth. - Heat the 2 preserve just to melt and combine.
- Completely cover ham with aluminum foil.
- Heat the ham, set the oven no lower than 325°F and heat to an internal temperature of 140°F as measured with a meat thermometer.
- 10 -12 minutes per pound.
- A half hour before done remove foil and glaze with the preserve mixture just to cover. Reserving the rest of the glaze to serve with the ham.

- Brush 3 tablespoons mustard over ham. Prepare ham according package directions.
- Drain cherries, reserving syrup. Set cherries aside. Blend cherry syrup, brown sugar, cornstarch, juice concentrates, water and remaining mustard in a saucepan. Bring mixture to a boil and reduce to simmer, occasionally stirring, for 5 minutes. Reserve 1/2 cup of sauce for glaze.

CITRUS CHERRY GLAZED HAM
My favorite way to eat ham. The mixture of orange juice and cherry pie filling makes a great sauce that is not too sweet. The recipe is from Sawgrass and Pines, a Florida Cookbook.

- Preheat oven to 325 °F.
- In a medium saucepan, combine apple cider and water, bring to a boil, then set aside.
- You will use this mixture to baste ham as it cooks.
- Remove skin from ham.
- Place ham, fat side up and score fat into diamonds and stud with cloves.
- Coat top of ham with brown sugar.
- Place ham fat side up in a shallow baking pan.
- Insert meat thermometer (make sure it is not touching bone or fat portion).
- Bake for@ 2 hours or 22-25 minutes per pound.
- Meat thermometer should read 160 °F.
- Baste every thirty minutes with cider mixture.
- Combine remaining ingredients in a sauce pan.
- Bring to a boil, simmer for 5 minutes, stirring.
- Serve over ham slices.

- Place ham on a rack in a shallow baking pan.
- Bake, uncovered, in a 325° F oven about 1-1/2 hours (or until thermometer registers 140° F).
- Meanwhile, in a saucepan combine the cherry preserves, vinegar, corn syrup, and spices.
- Cook and stir until boiling.
- Reduce heat; simmer two minutes.
- Stir in almonds.
- Remove from heat.
- Set aside 3/4 cup of the glaze.
- About 15 minutes before the ham is done, spoon some of the remaining glaze over the ham, basting occasionally.
- Remove from oven; place on a heated serving platter.
- Stir the water into the reserved 3/4-cup glaze; heat and serve along with the ham.

- Pour drippings from pan.
- Score fat surface lightly in uniform diamond pattern.
- Strain pie filling; set cherries aside.
