CHERRY WALNUT FUDGE
This, my favourite fudge recipe,is from an old Good Housekeeping Christmas Cook Book dated 1959. It's a little time consuming to make but well worth the effort; and the addition of dates really does make this fudge special. Prep time includes resting period before being spread into pan.

Steps:
- Grease 8"x8" pan.
- In 2 quart saucepan, combine sugar, cream of tartar, salt and cream, stirring well.
- Cover pan; bring to a boil.
- Boil 1 minute, or until all sugar crystals on sides of pan have melted.
- Remove cover (If using a candy thermometer, set in place).
- Continue cooking, without stirring, over gentle heat (I use medium-low) to 238 degrees, or until a little mixture in cold water forms a soft ball.
- Remove from heat; drop in butter;do not stir.
- Cool, without stirring, to 110 degrees, or until outside of pan feels lukewarm to the touch.
- Add vanilla.
- With heavy spoon, beat mixture until it loses its gloss and a small amount dropped from spoon holds it's shape.
- Quickly add nuts and fruits and pour into pan.
- Spread quickly and evenly.
- Cool and cut into squares.

CREAMY RICH WALNUT FUDGE
Usually when you cook sugar to the softball stage you want it to stay nice and pliable and clear. But in the case of fudge you actually want to cook it to softball for the chewy-ness, and then agitate it by mixing, which starts re-inverting it back to crystalline form. It should be in very tiny crystals.

Steps:
- In a saucepan heat the chocolate and milk on low, stirring until it's melted. Add the sugar, corn syrup and salt and heat to the softball stage (236 degrees F).
- Add the butter and pour off into a mixer bowl to cool. Add the vanilla and beat with a paddle until it starts to lighten; then quickly add the nuts. Continue beating on low until it loses its gloss and thickens. Pour into a greased 9 by 9-inch pan and spread evenly. Let cool then cut into 1-inch cubes.
CHERRY WALNUT WHITE CHOCOLATE FUDGE
This wonderful treat comes from Favorite Brand Name Recipes Holiday Desserts cookbooklet of Jan 2003. Preparation time does not include time needed for candy to cool.

Steps:
- Spray a 9"x9" pan with nonstick cooking spray, then spray the inside of a heavy large saucepan.
- In the prepared saucepan, combine sugar, cream, butter & syrup, then cook over medium heat until sugar dissolves & mixture comes to a boil, stirring freuently. Re-incorporate any sugar crystals that accumulate on the sides of the saucepan.
- Attach a candy thermometer to side of pan, making sure bulb is submerged in sugar mixture, BUT NOT TOUCHING BOTTOM OF PAN!
- Comtinue cooking about 6 minutes or until sugar mixture reaches soft-ball stage (234 degrees F) on candy thermometer, stirring frequently.
- Remove from heat & let stand 10 minutes ~ DO NOT STIR!
- Add white chocolate & vanilla, then stir until chocolate is melted & mixture is smooth, about 1 minute.
- Stir in cherries & walnuts, then spread evenly in prepared pan.
- Score into 64 squares while fudge is still warm.
- Refrigerate until firm, then cut along scored lines, separating into squares.

CHOCOLATE WALNUT FUDGE

- Butter an 8x8 inch dish.
- Place butter, chocolate chips and vanilla in a mixing bowl. Set aside.
- In a medium saucepan over medium heat, combine sugar, milk and marshmallows. Bring to a boil, stirring frequently. Reduce heat to low and cook 6 minutes more, stirring constantly. Remove from heat.
- Pour marshmallow mixture over contents of mixing bowl. Beat entire mixture until it thickens and loses its gloss. Quickly fold in nuts and pour into prepared pan. Refrigerate several hours until firm.

CRANBERRY WALNUT WHITE FUDGE
A visit to several Oregon cranberry farms inspired my unusual fruit-flavored white fudge. I make it for family and friends at holidays and for special occasions. I was thrilled when the recipe earned first place at our county fair.

- Line an 8-in. square pan with foil and butter the foil with 1 teaspoon butter; set aside. In a heavy saucepan, bring the sugar, sour cream and remaining butter to a boil over medium heat. Cook and stir until a candy thermometer reads 234° (soft-ball stage), about 15 minutes., Remove from the heat. Stir in the chips, marshmallow creme and vanilla until smooth. - Preheat oven to 375°. In a large bowl, cream the butter, sugars and extract until light and fluffy. Combine flour and salt; gradually add to creamed mixture and mix well.
