- Preheat the oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.

- Spray cookie sheet with nonstick cooking spray.
- Beat butter until creamy.
- Add brown sugar and 3 tablespoons granulated sugar; beat until blended.
- Add egg, baking soda, corn syrup and vanilla; beat well.
- Stir together flour and cocoa; beat into butter mixture.
- If batter becomes too stiff, use wooden spoon to stir in remaining flour.
- Cover; refrigerate about 30 minutes, if necessary, until batter is firm enough to shape.
- Shape dough into 1-inch balls.
- Combine 1/4 cup granulated sugar and cinnamon; roll balls in mixture.
- Place balls 2-inches apart on prepared cookie sheet.
- Bake 9 to 10 minutes or until cookies are set and tops are cracked.
- Cool slightly; remove from cookie sheet to wire rack.
- Cool completely.

THE BEST CHEWY CHOCOLATE CHIP COOKIES
We skipped the white sugar and went all in with dark brown sugar, which gives our cookies the ideal chewiness and perfect level of sweetness. - Sift the flour, salt, baking powder and baking soda into a large bowl.
- Beat the butter and brown sugar in a large bowl with an electric mixer on medium-high speed until pale and fluffy, about 4 minutes, scraping down the sides of the bowl as needed. (Use the paddle attachment for a stand mixer.) Beat in the eggs one at a time, then beat in the vanilla. Reduce the mixer speed to low. Add the dry ingredients and beat until combined. Stir in the chocolate chips by hand.
- Press plastic wrap directly onto the surface of the dough and refrigerate at least 1 hour or preferably overnight.
- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- Use a 1-ounce ice cream scoop to scoop half the dough onto the prepared baking sheets, spacing about 2 inches apart. Chill the remaining dough while you bake the first batch.
- Bake at 375 degrees until the cookies are golden around the edges but still soft in the middle, 12 to 15 minutes. Let the cookies cool for 10 minutes on the baking sheets, then transfer them to a wire rack to cool completely. Cool the baking sheets completely, then line with parchment paper and repeat the scooping and baking process with the remaining dough.

- Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before falling back into the mixture.

SOFT & CHEWY CHOCOLATE CHIP COOKIES
Are you hoping to bake a slightly thicker, chewier cookie than the usual Tollhouse recipe? After tinkering with the classic, I pulled a tray of perfect cookies out of the oven. They don't spread as much as the Tollhouse variety, so they're tender all the way through. Don't be scared off by the shortening that is used in place of butter: that's what keeps these chippers so nice and soft. Last night was the third time I've made them, and everyone who has eaten one comments that these are the best tasting, and looking, chocoloate chip cookies they've ever eaten. I tend to agree!

- Preheat oven to 375 degrees.Grease a cookie sheet (I use canola oil pan spray).
- Combine the flour, baking soda, and salt in a bowl. Stir lightly.
- In a separate, larger mixing bowl, cream the shortening, brown sugar and white sugar thoroughly. Crack in eggs, one at a time, beating well after each addition. Add vanilla, mixing well to combine.
- Begin adding the dry mixture to the shortening mixture. Add about 1/4 or 1/3 of the dry mixture at a time, thoroughly blending each addition of flour into the shortening before adding the next.
- If you like a hint of cinnamon in your cookies, add 1/2 teaspoon now (I think its an excellent addition: not so much that anyone notices the cinnamon taste, but it gives the cookies a little more flavor). Stir in the cinnamon.
- Add the chocolate chips and mix into the dough until they are evenly distributed.
- Spoon golf-ball sized mounds of dough onto the baking sheet: I make 12 per tray.
- Bake in the 375 oven for about 10 minutes. Just in case, I would check them once after 8 minutes, and allow them up to 12.
- Remove from the oven when the cookie centers are just set but still soft, and the edges are just browning. Cool on the tray for about 5 minutes, them remove to a cooling rack if you have one, otherwise a plate will be fine.
- Just don't stack them on top of one another while they are still soft!

This is a Cook's Illustrated recipe that was originally published in January 2009. These are dark, almost fudgy cookies that are not crumbly at all. They develop a nice, crackly top and are not overly sweet, even with the granulated sugar coating. CI recommends using Callebaut Intense Dark L-60-40NV, but any high- quality dark, bittersweet, or semisweet chocolate will work. Light brown sugar can be substituted for the dark, as can light corn syrup for the dark, but with some sacrifice in flavor. A spring-loaded ice cream scoop (size #30) can be used to portion the dough.
