Chex Mix Peanut Clusters Recipes

Steps:

• Line a baking sheet with parchment paper. Combine the chocolate chips, peanut butter chips and shortening in a large heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water). Stir until melted and smooth, 2 to 4 minutes. Remove the bowl from the pan and add the cereal and peanuts. Stir with a rubber spatula until evenly coated.
• Spoon the cereal mixture into clusters (about 2 tablespoons each) onto the prepared baking sheet; sprinkle with nonpareils. Refrigerate until firm, about 30 minutes.

Steps:

• Butter 9- or 8-inch square pan.
• In 3-quart saucepan, heat corn syrup and sugar just to boiling over medium heat, stirring constantly. Remove from heat.
• Stir in peanut butter. Gently stir in cereal and peanuts until evenly coated. Press firmly in pan. Let stand 1 hour. For squares, cut into 6 rows by 6 rows. Store loosely covered.

• Place cereal in a large bowl. In a small bowl, combine jelly, butter and corn syrup. Microwave until smooth; pour over cereal. Toss to coat., Microwave in batches on high for 4 minutes, stirring every minute. Spread onto a parchment-lined baking sheet to cool. Stir in chips, peanuts and, if desired, strawberries. Store in an airtight container.
