This is an easy to make Bar-B-Que sauce using ingredients most people have at home.

- In a small saucepan over medium heat, stir together the ketchup, brown sugar, Worcestershire sauce, vinegar, hot pepper sauce, garlic powder, mustard powder, and salt. Bring to a simmer, then remove from heat and allow to cool slightly before brushing on your favorite meat.

CHICK-N-QUE SAUCE
Great marinade for grilled chicken. A little zing and the black crispies are nummy. A little side note: my next to youngest DS made this with 1/2 cup lemon juice and 1/2 cup 20 year old balsamic vinegar in place of the other acids. He put in about 2 Tablespoons of tabasco to offset the sweetness of the balsamic. It was absolutely heavenly! Sweet and spicy... wonderful! Next time I make this recipe I will use his variation.... I have used white wine vinegar, white vinegar, apple cider vinegar, dry white wine, lemon juice, any acid will work beautifully.

- Bring to a simmer.
- If using as a marinade, let cool.
- If using as a mop, use immediately.
- Can be thickened, if desired. Gumbo file works just great, the sassafras adds a nice touch.

- One recipe for one bag of chicken tenderloins. I haven't had good luck with halving the recipe for smaller portions of chicken. If I'm preparing more chicken, I double the recipe - even if it isn't much more than one bag. Also, I get the best results when the chicken marinates overnight.
- Delicious hot or cold!

CALYPSO CHICKEN
This is really yummy chicken...a little spice and a little sweet. UPDATE...I had this made somewhere else and it was good. I made it per the directions tonight and it was pretty spicy. If you don't like spicy cut back on the jerk seasoning.

Steps:
- Sprinkle both sides of chicken with seasoning and pepper then coat with olive oil spray.
- Grill 5-6 minutes on each side until done.
- Combine remaining ingredients including half of juice of lime in medium bowl.
- Add chicken and turn to coat.
- Cover with foil and let sit for 5-10 minutes turning again half way through until flavors have blended and soaked onto the chicken.
- Serve chicken and use the sauce for dipping.

- Place the chicken on a cutting board. Cover with a sheet of waxed paper. With the smooth side of a meat mallet, pound to an even 1/4" thickness. Cut diagonally into 6 equal strips.
- In a small resealable plastic bag, combine the flour, sugar, salt, paprika, black pepper, garlic powder, onion powder, and cayenne. Shake to mix well. Add the chicken. Shake to completely coat the chicken with the flour mixture. Place in the refrigerator for at least 10 minutes.
- Preheat the oven to 450 degrees. Lightly mist a small nonstick baking sheet with oil spray. Set aside.
- In a small shallow bowl, combine the egg white and the milk. Beat with a fork until smooth. Place the bread crumbs on a small sheet of waxed paper set next to the egg-white mixture.
- One at a time, dip the chicken strips into the egg-white mixture, being sure to coat completely. Allow any excess egg-white mixture to drip off. Dip into the bread crumbs to coat completely. Place, not touching, on the reserved baking sheet.
- Lightly mist both sides with oil spray.
- Bake for 4-6 minutes per side, or until the breading is crisp and the chicken is no longer pink inside.
