SPAGHETTI SAUCE CHICKEN AFRITADA
Afritada, a traditional chicken and vegetable stew, is a gateway dish to Filipino cuisine. Spaghetti sauce, instead of fresh tomatoes or tomato sauce, is used in this recipe for convenience and taste.

Steps:
- In a large stockpot, heat the oil over medium-high heat. Add the garlic and onions and cook for 3 minutes, until the onions are soft.
- Add the chicken pieces and cook for 3 to 5 minutes, turning occasionally, until the chicken is no longer raw on the outside.
- Stir in the potatoes, carrots, chicken broth, spaghetti sauce, soy sauce, sugar, black pepper, and bay leaves. Stir well and bring the mixture to a boil. Reduce the heat to medium and cook, uncovered, for 20 minutes.
- Add the bell peppers. Continue cooking for another 15 to 20 minutes, until the potatoes are fork tender.
- Remove the afritada from the heat. Stir in the fish sauce, if using, and serve hot with the rice.

- In a wok,heat a 2 tbsp of cooking oil.saute the garlic until a bit brown,then follow the onion.

- pour some water(enough for you to make its sauce) let it boil,and lastly pour in tomato ketchup.when the sauce become thick,turn off the heat.serve.

- Marinate chicken pieces in soy sauce and calamansi juice/lemon juice for 1 to 2 hours or overnight.
- Heat oil in a large pot. Brown the chicken on both sides. Do this in batches if the pot is not big enough. I did mine in two batches. Transfer the chicken pieces on a plate.
- Add onion, garlic. Saute until translucent. Add chopped tomatoes. Cook until softened. Add tomato paste, marinade and fish sauce. Stir, scraping the bottom of the pot.
- Add back the chicken. Season with black pepper. Use two wooden spoons and gently toss until chicken is coated. Cover with lid and cook for 2 to 3 minutes over medium heat.
