- In a large bowl, mix the soy sauce, vinegar, honey, garlic, ginger, scallions and canola oil. Take 1/4 cup of marinade (to be used for basting) and set aside.
- Place chicken into the marinade and stir to coat. Cover and marinate in the refrigerator at least 1 hour. Wrap the chicken chunks with bacon, and thread onto skewers so that the bacon is secured. Alternate chicken with mushrooms, peppers and pineapple chunks.
- Lightly oil the grill grate. Arrange skewers on the heated grill. Cook 15 to 20 minutes, brushing occasionally with remaining soy sauce mixture, until bacon is crisp and chicken juices run clear.

Steps:
- Preheat grill to medium heat.
- Combine the chicken, bbq sauce, salt, and pepper, stirring until evenly mixed.
- Threading one end of the bacon onto the end of a skewer. Add a piece of chicken, and weave the bacon around the chicken and back through the skewer, creating a wave pattern between the chicken. Move the bacon and the chicken down the skewer, repeating until the other edge of the bacon is threaded through.
- Repeat on the rest of the skewers with the remaining chicken and bacon.
- Grease the surface of the grill by rubbing the grates with tongs and an oiled paper towel.
- Grill the skewers for about 12-18 minutes with the lid closed, flipping them halfway.

- Whisk together ranch dressing and hot chile paste in a large bowl.
- Mix in chicken pieces and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 to 3 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove chicken from the bag and transfer to a plate or baking sheet lined with paper towels. Pat chicken pieces dry with more paper towels.
- Thread a piece of onion about 1 1/2 inches down the skewer.
- Thread the end portion of one strip of bacon onto skewer so the rest of the strip is hanging down. Skewer on a piece of chicken; thread on the next portion of the bacon. Turn the skewer so that the long end of the bacon is again hanging down. Repeat this process of skewering and turning until the entire strip of bacon is threaded, using 4 to 5 chicken pieces.
- Thread a second piece of onion onto the end of the skewer.
- Repeat steps 5 through 7 for all twelve skewers.
- Season chicken skewers with salt and pepper as desired.
- Cook the skewers on the preheated grill, turning every 3 to 4 minutes, until nicely browned on all sides and the meat is no longer pink in the center, 12 to 16 minutes total per skewer. Serve with ranch dressing as a dipping sauce.

- 1. Soak the skewers for about 30 minutes in the apple juice. (This helps the skewers not to burn and infuses the apple flavor into the chicken kabobs.)
- 2. Take the skinless chicken breast and cut the long way into 1 1/2 inch thick strips until you have 8 chicken strips. (You can also purchase them already cut.) Cut away any remaining fat or skin. Clean the chicken thoroughly.
- 3. Soak the chicken in cranberry juice for 30 minutes.
- 4. While the skewers and chicken are soaking, cut the fresh pineapple and green bell pepper into 8 bite-size chunks. (You can use canned pineapple chunks.)
- 5. Mix all the seasonings together in a small bowl.
- 6. Season the chicken liberally on all sides.
- 7. Once everything has been soaking/seasoned and cut into bite-size chunks, you're ready to begin assembling the kabobs. Pierce one end of a chicken strip with a skewer. Then pierce one end of a bacon strip and lay over the chicken. Allow both chicken and bacon strip to lay to one side of the skewer. Add a chunk of pineapple and a chunk of green bell pepper to the skewer. Snake the chicken and bacon strips over the chunks, then repeat adding the chunks until all the chicken and bacon strip is assembled on the skewer.
- 8. Repeat for the remaining skewers.
- 9. Now that all the skewers have been assembled, place the chicken bacon kabobs on the grill, preheated medium to low. Grill 15-20 minutes turning halfway through the cooking process.
- 10. While kabobs are on the grill, prepare the glaze. Reduce apricot jam on low heat, stirring often.
- 11. Once the kabobs are done grilling, brush the jam over the kabobs. Turn them and brush the other side allowing the kabobs to cook with the glaze for about 2 minutes on each side. Remove from the grill and enjoy! :)
