I wanted to add a bit more zing to my plain ol' chicken burger so i threw a few things together and boy does this taste great!

  • Combine all ingredients in a small bowl and whisk until well combined.
  • Spread on bottom of bun and top with chicken and etc.

CHICKEN BURGER WITH THREE MUSTARD SAUCE

These spicy chicken burgers are a delightful departure from the the more usual beef burgers and are about 50 percent lower in fat. You can also make then wirh grund turkey breast, but be sure it is ground without the skin.

Chicken Burger With Three Mustard Sauce image

Steps:

  • FOR THE MUSTARD SAUCE: Combine the onion and celery in a small saucepan and cook, covered, over low heat until the onion is translucent, adding a little water if necessary to prevent scorching. Add the white wine and mustards and mix well. Add the chicken stock and cook over medium heat for 2 minutes. Stir in the parsley and remove from heat. Pour the sauce into a bowl and set aside to cool.
  • FOR THE BURGER: Combine the onion, thyme, and parsley in skillet and cook, covered over very low heat until the onion is translucent, adding a little water if necessary to prevent scorching. Remove from heat and spoon the onion mixture in a bowl., Add the ground chicken, pepper, Worcestershire sauce, and Tabasco sauce and mix well. Divide the chicken mixture into 4 patties.
  • Prepare the grill and grill the patties about 4 minutes per side, or until done.
  • TO SERVE: Place each chicken burger on a bun with a slice of tomato and a lettuce leaf. Serve 2 tablespoons of mustard sauce per serving on the side.

Steps:

  • In a large skillet, saute onion in 1 tablespoon oil until tender. Place in a large bowl. Add chicken, crumbs, Parmesan, eggs, herbs and seasonings; mix well. Stir in enough milk to be able to shape mixture into patties. Shape into eight patties. In the same skillet, cook patties in remaining oil for 5 minutes or until browned on each side and heated through. Serve on rolls with lettuce and tomatoes.

  • SAUCE: Combine all of the ingredients in a small bowl. Season to taste with salt and pepper. Whisk until smooth and set in the fridge for flavors to intensify.
  • PREP CHICKEN: Halve the 2 chicken breasts horizontally to have 4 pieces. Pound the pieces to an even thickness. You can also cut down the pieces a bit to fit inside the bun, but remember the chicken does shrink down a bit as it's cooked. In a shallow wide bowl, add the flour, paprika, Italian seasoning, garlic powder, and onion powder. Add salt and pepper to taste; I add 1 teaspoon salt and 1/2 teaspoon pepper. Stir seasonings. Dredge all 4 chicken pieces in mixture and set aside to a plate.
  • COOK CHICKEN: Heat 1 tablespoon oil in a skillet over high heat. Cook for 2 and 1/2 minutes until golden and browned, then flip. Cook until internal temperature reaches 160 degrees F; carryover heat will bring it to 165 degrees. Add cheese and let stand for about a minute or until melted. Alternatively grill chicken breasts: Preheat a grill or grill pan to medium-high heat (about 400 degrees F.) Generously oil the grill (I drench a rolled-up paper towel in vegetable oil and, holding it with tongs, rub it over the grill grates. Don't skip this step.) (For a grill pan: add 1 tablespoon oil to the pan) Place the dredged chicken on the grill. Grill for 8-10 minutes, flipping once in between halfway, or until chicken juices run clear and internal temperature is at 160 to 165 degrees F. (160 degrees will carryover heat to get to 165 degrees F). Tent chicken with foil and let stand for 5-10 minutes before slicing against the grain.
  • GRILL BUNS: When you have about 1 minute left on the cooking time for the chicken, place the buttered buns on the grill (over indirect heat, alongside the edges of the grill). Alternatively, use a grill pan or dry skillet. Watch carefully-- they are toasted in about 30 seconds to a 1 minute.
