Chicken Colombo with Purple Jasmine Rice image

Steps:

  • Place rice in a medium saucepan along with 1 3/4 cups water. Bring to a boil over high heat; immediately reduce to low heat. Cover and let simmer for 20 minutes. Remove from heat and keep warm.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add onions and garlic and cook, stirring, until golden brown. Add tomatoes, chicken, and sprinkle over curry powder; season with salt and pepper. Reduce heat to low, and cook, stirring, until mixture has thickened and chicken is cooked through, 15 to 25 minutes. Add coconut milk and stir until well combined; cook 5 minutes more. Sprinkle over cinnamon.
  • Divide rice evenly among 4 serving plates; top with chicken mixture. Garnish with cilantro and serve immediately.

Caramelized Black Pepper Chicken With Jasmine Rice image

Steps:

  • In a small bowl, combine sugar, fish sauce, water, vinegar, garlic, ginger, pepper and chiles. Set aside.
  • In a large, deep skillet, heat oil over high. Add sugar mixture, shallot and chicken to skillet. Stirring frequently, cook until chicken is cooked through, about 10 minutes. Garnish with cilantro and serve over jasmine rice.
  • 4/17/2020 NOTE: After making, I believe the recipe needs improvement. Follow as advised, but once the chicken is nearly cooked through, have ready 1 tablespoon cornstarch mixed with 1 1/2 tablespoons cold water. Add to pan at the last minute and cook for 1 minute or until bubbly with constant stirring. This solution will thicken the sauce nicely. If you're desiring a much deeper brown color, add 1 teaspoon kitchen bouquet before thickening.

1 teaspoon minced garlic
1 teaspoon finely grated ginger

2 Thai chiles, halved (can sub dried red chiles)
1 tablespoon canola oil or 1 tablespoon vegetable oil
1 shallot, thinly sliced
1 lb boneless skinless chicken breast, cut into 1-inch pieces (can sub thighs)
cilantro, to garnish

Chicken Soup With Jasmine Rice and Ginger image

Steps:

  • In a medium saucepan, cover the rice with the water; bring to a boil over high heat.
  • Reduce the heat to low and simmer until the rice is tender and porridgelike, about 25 minutes.
  • Meanwhile, cut the piece of ginger into slivers: thinly slice the ginger crosswise; stack the slices, removing the bottom rounded slice, so the stack is stable and easy to work with; cut the slices lengthwise into thin slivers.
  • Add the chicken stock, fish sauce, salt, sugar, & red pepper flakes(if using) to the rice, bring to a simmer and continue cooking over low heat for 10 minutes.
  • Stir in half of the ginger and simmer for 10 minutes longer.
  • Squeeze some lemon juice in the soup!
  • Ladle the soup into shallow bowls, garnish with the shredded chicken, sliced scallions, chopped cilantro and the remaining slivered ginger and serve.
  • *The recipe can be made through until adding the chicken etc., and refrigerated overnight.
  • When reheating, add extra stock to adjust the consistency.
  • Serve at once.

1 lemon, juice of (squeeze a little at a time)
