- Preheat oven to 375˚F (190˚C).
- Add the sweet potatoes, lemon slices, green beans, olive oil, rosemary, thyme, garlic, salt, and pepper to a large bowl (or parchment paper-lined sheet tray) and toss until fully coated.
- Season the chicken breast with salt, pepper, and paprika.
- Transfer to a parchment paper-lined sheet tray and place the chicken breast on top of the vegetables (if you tossed your vegetables in a bowl).
- Bake until vegetables are tender and chicken is cooked through, about 20 minutes.
- Enjoy!

GARLIC ROASTED CHICKEN AND POTATOES
I've been making this recipe for so many years, I can't remember where I got it from. It's really quick to throw together. After fixing it several times, my husband 'discovered' that you were supposed to spread the garlic on the chicken. It's one of his favorites now. This recipe is very easy to adjust up or down. Just make sure your pan is big enough if adjusting up. I usually add more potatoes, since we like them. Serve with a mixed greens salad.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place the butter into a roasting pan, and melt in the oven. When butter is melted, swirl to coat the bottom of the roasting pan, and place the chicken drumsticks and thighs, potatoes, and unpeeled garlic cloves into the pan. Sprinkle with salt and black pepper; turn the chicken, potatoes, and garlic to coat with butter.
- Bake in the preheated oven until the chicken is no longer pink inside and the juices run clear, about 40 minutes, basting 3 times with pan drippings. Brush maple syrup over the chicken pieces, and spoon pan drippings over the potatoes.
- Return to oven, and bake until the chicken and potatoes are tender and browned, about 20 more minutes. An instant-read thermometer inserted into a thick part of a thigh should read at least 165 degrees F (74 degrees C). To serve, squeeze garlic from the baked cloves, and spread the soft garlic over the chicken. Pour pan juices over chicken and potatoes.

CHICKEN ROASTED ON SWEET POTATOES AND GARLIC
I adapted this recipe from Donna Hay's Flavours Cookbook. In HER recipe she used normal potatoes instead of sweet potatoes. But I prefered it with the sweet potatoes. A very delicious and simple recipe. Quick whip up.

Steps:
- Preheat oven to 200C (400F).
- Place oil, sweet potatoes, oregano, garlic, salt and pepper in baking dish and toss to combine.
- Bake for 25-30 minutes or till potatoes are almost cooked.
- While potatoes are cooking, brush chicken fillets with a little oil and sprinkle skin with extra salt and pepper.
- Heat frying pan over medium-high heat, add chicken skin side down, and cook for 3 minutes till well browned.
- Place chicken skin side up, on top of potatoes and garlic in baking dish.
- Bake for a further 10 minutes or till chicken is cooked through, and juices run clear in the thickest part.
- To serve, place the chicken and sweet potatoes on serving plates.
- Squeeze the garlic from its skin and spread on the potatoes and chicken.
- Serve with steamed beans and a squeeze of lemon.

- Preheat the oven to 350 degrees F (175 degrees C).
- Slice the potatoes into thick strips like steak fries, and layer them in the bottom of a 9x13 inch pan. Drizzle with 2 tablespoons olive oil, and dust with 1 tablespoons of the adobo seasoning. Arrange the chicken pieces on top of the potatoes. Drizzle the remaining olive oil onto the chicken, and sprinkle the rest of the adobo seasoning. Sprinkle the sliced garlic around the chicken.
- Bake, uncovered for 1 hour, or until the chicken is no longer pink, and the juices run clear. If using a meat thermometer, the internal temperature should be 175 degrees F (79 degrees C). If the chicken becomes too dark before it has finished cooking, cover the dish with aluminum foil.

- Preheat oven to 375°F. Separate the cloves of garlic (you should have about 30 cloves) and peel. Mince four of the cloves. Set aside remaining garlic cloves.

- Remove chicken from package. discard neck and giblets. Rinse thoroughly under cold running water, both inside and out. Pat chicken dry with paper towels.
- Liberally season both the inside and outside of the chicken with salt and pepper. Place the apple slices inside the body cavity of the chicken and pour the lemon juice inside as well. Place chicken in the center of a baking sheet that has a cooling rack placed right-side up in the pan.
- Toss the potatoes, onions and garlic in a bowl with a few tablespoons of olive oil, some salt, pepper and a bit of nutmeg if desired. Arrange around chicken on baking sheet. Pour any remaining olive oil over the chicken.
- Insert a probe thermometer into the thickest part of the chicken thigh, making sure the probe is not touching any bones. (I generally slide the probe all the way through the bottom of the breast and into the thigh, just to be sure I’ve got the tip in the right spot.)
