WARM AND LIMEY CHICKEN SALAD

Marinated boneless chicken breast strips are placed on a bed of lettuce with mandarin oranges, walnuts, and golden raisins, then dressed in a tangy lime dressing.

Warm and Limey Chicken Salad image

Steps:

  • In a jar, combine lime juice, sugar, lime zest, rice vinegar, and mustard. Shake well, and set aside. In a small bowl, mix chicken with limeade concentrate and pepper.
  • Heat oil in a skillet over medium high heat. Cook and stir chicken 4 to 6 minutes, or until no longer pink, and juices run clear.
  • Divide lettuce onto 4 salad plates. Top with mandarin orange segments, golden raisins, and walnuts. Place cooked chicken on top, and drizzle lightly with dressing.

Spicy Chicken Salad image

Steps:

  • Combine all ingredients in large bowl. In a small bowl, stir together lime juice, mustard, mayonnaise, hot sauce and salt and pepper. Slowly drizzle in olive oil while constantly stirring with fork. Pour dressing over chicken mixture in large bowl and toss to combine. Serve over greens or as a sandwich.

1 red pepper, chopped
2 scallions, thinly sliced
1 avocado, peeled and diced
1/2 cup chopped cilantro
3 tablespoons lime juice
1 tablespoon Dijon mustard

Splash of hot sauce

Steps:

  • Grill or broil the chicken breasts until cooked and cut into bite sized pieces.
  • If using a whole cooked chicken, take all the flesh off the chicken, discarding the skin and bones, and cut into bite sized pieces.
  • Combine chicken and all the salad ingredients in a bowl.
  • Make the dressing by combining all of the ingredients in a jar and shaking it well.
  • Just before serving add the dressing to the salad and toss together until salad is coated in dressing.
