- Preheat the oven to 400 degrees. Place a large skillet over medium heat and add in 1tablespoon of the olive oil. Add in your chicken and season with salt and pepper. Cook for 3-5 minutes on each side or until the chicken is no longer pink on the inside. Remove skillet from heat and remove chicken with tongs or a slotted spoon and cut into cubes, and set aside. While the chicken is cooking, place your zucchini noodles into a roughly 10 x 10 casserole or baking dish. Set aside. While the chicken is cooking, place your almond meal and basil, oregano, parsley, and garlic powder in a bowl. Season with salt and pepper generously and then toss to combine and then add in the chicken broth. Using your fingers, roll like a dough until all of the meal is formed into dough. Set aside. Place the skillet back over medium heat and add in the rest of the olive oil. Let heat and add in the garlic and red pepper flakes. Cook for 30 seconds and then add in the onions, thyme, mushrooms and peas. Season with salt and pepper and cook for 3-5 minutes or until mushrooms wilt. Add in the chicken broth and let reduce for about 1 minute. Then, push vegetables to the side and add in the flour. Whisk immediately until creamy and then push the vegetables back in and stir to combine. Cook until the chicken broth is reduced. Pour the mixture evenly over the noodles, add in the cooked chicken and toss in the baking tray to combine. Once combined, evenly spread the mixture in the baking tray. If the mixture seems to try, evenly pour over 1/2 cup of chicken broth. Take the almond meal "dough" and crumble into breadcrumbs over the casserole, evenly until all of the "dough" is used. Sprinkle over the casserole with the fresh parsley and bake 20-25 minutes.

You can also substitute ham or turkey for the chicken. This dish was named for Luisa Tetrazzini, a well known, well FED turn-of-the-century Italian singer!

- In a large non-skillet, saute the tenderloins. Salt and pepper to taste. Add the mushrooms, red bell peppers and yellow bell peppers and cook until vegetables are tender.
- Cook the spaghetti according to package directions. Drain and set aside.
- In a large saucepan, melt the butter or margarine and blend in flour. Gradually stir in the chicken broth and half-and-half. Cook over medium low heat, stirring constantly, until the sauce begins to thicken. Add garlic salt and ground black pepper to taste. Blend in the Swiss and Parmesan cheeses and continue heating, stirring constantly, until the cheeses melt.
- Stir in the chicken/vegetable mixture and heat thoroughly. Toss with the cooked pasta and top with grated Parmesan cheese, if desired.

- Preheat the oven to 450 degrees F.
- Spread 1 tablespoon of butter over a 13 by 9 by 2-inch baking dish. Melt 1 tablespoon each of butter and oil in a deep large nonstick frying pan over medium-high heat. Sprinkle the chicken with 1/2 teaspoon each of salt and pepper. Add the chicken to the hot pan and cook until pale golden and just cooked through, about 4 minutes per side. Transfer the chicken to a plate to cool slightly. Coarsely shred the chicken into bite-size pieces and into a large bowl.
- Meanwhile, add 1 tablespoon each of butter and oil to the same pan. Add the mushrooms and saute over medium-high heat until the liquid from the mushrooms evaporates and the mushrooms become pale golden, about 12 minutes. Add the onion, garlic, and thyme, and saute until the onion is translucent, about 8 minutes. Add the wine and simmer until it evaporates, about 2 minutes. Transfer the mushroom mixture to the bowl with the chicken.
- Melt 3 more tablespoons butter in the same pan over medium-low heat. Add the flour and whisk for 2 minutes. Whisk in the milk, cream, broth, nutmeg, remaining 1 3/4 teaspoons salt, and remaining 3/4 teaspoon pepper. Increase the heat to high. Cover and bring to a boil. Simmer, uncovered, until the sauce thickens slightly, whisking often, about 10 minutes.
- Bring a large pot of salted water to a boil. Add the linguine and cook until it is tender but still firm to the bite, stirring occasionally, about 9 minutes. Drain. Add the linguine, sauce, peas, and parsley to the chicken mixture. Toss until the sauce coats the pasta and the mixture is well blended.
- Transfer the pasta mixture to the prepared baking dish. Stir the cheese and breadcrumbs in a small bowl to blend. Sprinkle the cheese mixture over the pasta. Dot with the remaining 3 tablespoons of butter. Bake, uncovered, until golden brown on top and the sauce bubbles, about 25 minutes.

- Put cooked spaghetti into 9x13-inch baking dish. Place chicken on top of spaghetti.

- Preheat oven to 350 degrees F (175 degrees C). Prepare a 13x9-inch baking dish with nonstick cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain. Pour rotini into prepared baking dish.
- Melt butter in a heavy saucepan over medium heat. Cook and stir onions, celery, and bell pepper in melted butter until softened, about 5 minutes.
- Stir milk, cream of mushroom soup, poultry seasoning, salt, and black pepper into the onion mixture. Reduce heat to medium-low and bring to a simmer; about 5 minutes. - Saute: Position a rack in the center of the oven; preheat the oven to 350ºF. Add a swish of oil to a large saute pan and saute the mushrooms over medium-high heat for 5-7 minutes, remove to a plate.
- Sauce: Add 3 tablespoons of butter to the same saute pan, once it melts add the flour and whisk. Cook for 1-2 minutes to remove the raw flour taste. Slowly stream in the chicken broth about 1/4 cup at a time while you whisk using your other hand. Allow the sauce to start bubbling, then let thicken for 3-4 minutes or until it just coats the back of a spoon. Lower the heat to the lowest heat setting and add the sour cream, 1 teaspoon garlic powder, and onion powder as you whisk to make a smooth sauce. If the heat is too high the sour cream will curdle (fine to eat, just not as visually appealing.) Once the sour cream is mixed in, stream in the cream. Kick the heat back up to medium-high and allow the sauce to thicken, 2 minutes.
- Assemble: Remove from heat, stir in the cheddar cheese and let it melt. Taste and adjust with salt and pepper as desired. Fold in the noodles, sauteed mushrooms, and shredded chicken. Spray a 9x13 baking pan with nonstick cooking spray, add the prepared tetrazzini to the pan. Melt the remaining 3 tablespoons of butter in a small bowl, stir in the parmesan, Italian breadcrumbs, and the remaining ½ teaspoon of garlic powder (if desired.) Scatter the breadcrumb mixture evenly over the casserole. Bake, uncovered for 30-35 minutes or until the breadcrumbs brown and the sauce bubbles around the rim. Brown under the broiler for a few seconds to darken the breadcrumbs more if you'd like. Serve warm topped with chopped parsley if desired.
