CREAMED CORN DIP
Generally, when you think of creamed corn, you think of hot soup or pudding. But this version opens up another possibility: dip. Made with fresh parsley and caramelized onions, it's served cold with crisp vegetables or baguette toasts - a lovely way to start a holiday party.

Steps:
- Heat 1 tablespoon oil in a medium skillet over medium-low heat. Add the onions and 1/2 teaspoon salt, and cook until soft and just starting to brown, about 4 minutes. Add the corn, and cook, stirring, until heated through and starting to turn golden, about 3 minutes. Add the remaining 1 tablespoon oil and the garlic, and cook until fragrant, about 2 minutes. Set aside 1/2 cup of the vegetable mixture. Transfer the rest to a food processor, add 1/4 cup water and process until mostly creamy with a little texture.
- In a medium bowl, combine the sour cream, mayonnaise, parsley, Parmesan, 1/2 teaspoon salt and 1/4 teaspoon pepper. Add the pureed vegetables and the reserved mixture, and stir to combine. Refrigerate, covered, for at least 1 hour up to 3 days before serving. Serve chilled, with dippers.
EASY CORN DIP

- Preheat the oven to 375 degrees F.
- Stir together the cream cheese, sour cream and mayonnaise in a large bowl until combined. Add the corn, chiles, jalapenos, salsa, salt, pepper and half the grated cheese, then stir.
- Spread the mixture into a 9-by-13-inch casserole dish and sprinkle the top with the remaining cheese. Bake until bubbly and golden, about 20 minutes.
- Top with the cilantro and serve warm with the corn chips on the side.
CORN DIP
This is a cool, refreshing dip that can be served anytime. Serve with chips, crackers or sliced vegetables. Exceptional with Hawaiian bread.

SWEET CORN DIP
This is a yummy dip that you won't be able to stop eating. Sometimes I add some cooked, chopped bacon. Cut down the fat by using low-fat or fat-free varieties of the cheese, sour cream, and miracle whip. Add an extra jalapeno if you like it spicy! Use two cans of sweet corn if you can't find the shoepeg variety.

- Using a sharp knife, remove corn from cob and place in a large bowl. Add cheese, scallions, green chilies, and roasted red pepper; set aside.
- In a small bowl, combine remaining ingredients except the bread; mix well. Pour over corn mixture and toss until evenly coated. Refrigerate 2 hours, or until ready to serve.
- Using a serrated knife, cut a hole in top of bread about 3 inches in diameter. Hollow out bread, leaving one inch of bread around sides. Spoon dip mixture into bread bowl. Cut bread top and hollowed out pieces into 1-inch chunks for dipping.

- Heat a grilling pan. Use the pastry brush to cover the corn in some oil, then add the cobs to the pan.
- Brown each corn side at least 2 minutes. In total it will take between 10 to 15 minutes. When you flip your cobs with a BBQ tong, add a little more of the olive oil with the pastry brush until all oil is used. Because this keeps the corn juicy and crisp at the same time. When done, set the corn aside to cool a bit.
- Heat 4 Tbsp vegan butter and remaining 1 Tbsp olive oil in a saucepan. Add onions, scallions, garlic, bell peppers, red pepper flakes, and season with a pinch of salt and pepper. Fry everything for around 7 minutes.
