CRESCENT CHICKEN BUNDLES
When I was expecting our third child, this was one of the meals I put in the freezer ahead of time. We now have four kids and they all like these rich chicken pockets. I've also made them with ham or smoked turkey. -Jo Groth, Plainfield, Iowa

Steps:
- Preheat oven to 350°. Beat cream cheese, 2 tablespoons butter, chives, milk, salt and pepper until blended. Stir in chicken., Unroll crescent roll dough and separate into eight rectangles; press perforations together. Spoon about 1/2 cup chicken mixture in the center of each rectangle. Bring edges up to the center and pinch to seal. Brush with remaining butter. Sprinkle with crushed stuffing, lightly pressing down., Transfer to ungreased baking sheets. Bake until golden brown, 20-25 minutes. Freeze option: Freeze unbaked bundles on baking sheets until firm; transfer to a freezer container. May be frozen up to 2 months. To use, thaw in refrigerator. Bake as directed, increasing time as necessary to heat through.

CHICKEN BUNDLES FOR TWO

- Divide chicken and vegetables between two pieces of double-layered heavy-duty foil (about 18 in. square). Sprinkle with the sage, salt and pepper; top with dill sprigs. Fold foil around the mixture and seal tightly. , Grill, covered, over medium heat for 30 minutes or until a thermometer reaches 170°.

Steps:
- Combine first six ingredients on medium bowl. Set sauce aside.
- Bring broth to boil in large saucepan. Working in batches, add cabbage leaves. Cover and simmer until leaves are wilted, about 2 minutes. Using slotted spoon, transfer leaves to bowl of cold water. Drain leaves; pat dry. Add beans to broth in pan; until tender, about 2 minutes. Using slotted spoon, add beans to sauce. Pour off all but 1/4 cup liquid from saucepan. Add chicken; stir over medium heat until cooked through, breaking up meat with spoon, about 3 minutes. Drain chicken; add to sauce. Season with salt. Cool. (Can be made 3 hours ahead. Cover chicken mixture and cabbage seperately; chill. Bring to room temperature before continuing.)
- Place 1 cabbage leaf on work surface. Mound scant 1/4 cup chicken mixture in center of leaf. Fold in 3 sides of leaf; roll up to form bundle. Reapeat with remaining 11 cabbage leaves and chicken mixture.
VEGETABLE CHICKEN
The original recipe for this dish only called for vegetables, but I eventually added the chicken to make it a mouthwatering main meal.

- In an ungreased 13-in. x 9-in. baking dish, place the chicken, celery, green beans, carrots and onion. , In a small bowl, combine the zucchini, tomatoes, tapioca, sugar, salt if desired and pepper. Pour over chicken and vegetables. , Cover tightly and bake at 350° for 1-1/2 hours or until chicken juices run clear and vegetable mixture thickens. Stir vegetables occasionally during baking.

I have not made this recipe yet, but the photo from my Land-O-Lakes cookbook looks delicious. It also looks time consuming so prepping ahead sounds like a good idea. If you try this please let me know. Hope you enjoy.

Steps:
- heat oven to 3508°F.
- flatten each chicken breast half to about 1/4" thickness by pounding between two sheets of waxed paper, set aside.
- in medium bowl combine butter, carrots, zucchini, salt, rosemary, and black pepper.
- divide mixture evenly between each flattened chicken breast.
- roll up chicken breast.
- wrap one bacon piece around each chicken breast bundle, secure with toothpicks.
- in a 13x9 baking pan, place chicken bundles.
- in small bowl stir together brandy and chicken broth.
- pour over chicken.
- bake basting occasionally for 35 to 40 minutes, or until chicken is fork tender.
- Reserve pan juices.
- place chicken bundles on platter, keep warm.
- in a 1-qt saucepan combine pan juices plus enough chicken broth to equal 1/4 cup.
- in a small bowl mix together sour cream and flour.
- stir into pan juice mixture.
- cook over medium-low heat (DO NOT BOIL) stirring until thickened (2 to 4 minutes).
- when ready serve sauce over chicken bundles.
