JOLEAN'S " SICK EGG" RECIPE

This is an old family secret that my Mom used to call a "Sick Egg." I remember it from my childhood -- it's the first solid food past the chicken soup stage that Mom would fix us after we were sick with the flu, when we were starting to get hungry but still afraid to eat because of nausea...Hence, the name "Sick Egg." NOTE: This will only make you feel better if you like eggs to begin with...I'm pretty sure it would make things worse if you don't like them!!!

Steps:

  • Toast a piece of white bread lightly in a toaster. Leave it plain (no butter.).
  • Meanwhile, in a very small non-stick skillet LIGHTLY sprayed with Pam, gently crack 1 egg over medium-high heat (don't add salt or pepper). Cover skillet and LISTEN -- When you begin to hear a slight "sizzling sound", turn the heat off and let it sit (covered) on the burner for about 4 minutes. Uncover and check egg -- there should be NO slimy eggwhite on top, and the yolk should be 1/4 done and 3/4 runny.
  • Lay egg flat on top of toast and cut into about 1/2" cubes.
  • Transfer to a bowl and toss gently, letting the soft yolk sort of coat the toast pieces a little bit.
  • NOTE: My kids now love this recipe and ask for it when they are NOT sick -- So in that case, I BUTTER the toast, I melt 1 teaspoons butter in the skillet to cook the egg in, and I salt & pepper the egg too! (Honestly, I still eat this recipe fixed that way when I'M not sick either!) :) I think my Mom would probably frown upon that -- .

JOLEAN'S BUTTERSCOTCH PIE, PENNSYLVANIA DUTCH STYLE

This is a personal, absolute favorite of mine!!! Mom never would tell us where she got this recipe (which always made Dad raise one eyebrow...LOL!) And she never gave us girls the recipe while she was here --- it was something truly special to her as well, although I don't know exactly why. I found the old, yellowed, hand-written recipe hidden deep in her personal recipe box after she passed away... The taste and the texture of this pie is incredible, and I've never been able to match it -- I've tried for 6 or 7 years to find a "quick" fix for this. But nope...Nothing doing. Gotta have this exact recipe!!! Once you have this, you'll never fully enjoy any other butterscotch pie!!! (I sound pretty serious, don't I?) LOL! No, seriously, the recipe looks a whole lot more complicated than it really is -- super simple, just home-made! YUM!

Jolean's Butterscotch Pie, Pennsylvania Dutch Style image

Steps:

  • Preheat oven to 350°.
  • Stir brown sugar and butter in a saucepan until butter melts and sugar dissolves. Cook 2-3 minutes longer on low-medium heat, and then remove from fire.
  • Beat egg yolks.
  • In separate large bowl, mix flour with 1/2 of milk, until smooth. Then add beaten egg yolks and salt and mix well. Blend remaining milk with this mixture.
  • Add flour mixture to saucepan with sugar/butter mixture and cook on low/medium heat until thickened (anywhere from 30-45 minutes), stirring CONSTANTLY.
  • Remove from heat and blend in vanilla extract. Stir CONSTANTLY until well blended and slightly warm and then pour into a prepared (baked) 9" pie crust.
  • Top pie with meringue (recipe to follow).
  • After meringue is spread on top, Bake at 350° for 12 to 15 minutes, or until meringue is golden. Cool for 10-15 minutes.
  • MERINGUE: 3 egg whites (reserved from pie filling recipe), 1/2 teaspoons vanilla, 1/4 teaspoons cream of tartar, 6 tablespoons granulated sugar.
  • With a mixer, beat egg whites with vanilla and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff and glossy peaks form and all sugar is dissolved.
  • Spread meringue over slightly warm filling, sealing to edge of crust. (Then bake and cool as directed above.).

1 cup light brown sugar, firmly packed
4 tablespoons flour (fresh)
2 cups whole milk
3 large egg yolks, separate eggs (reserve whites for meringue topping)
1/2 teaspoon pure vanilla extract
1 pinch salt
1 (9 inch) pie crusts, prepared (baked and cooled)
3 large egg whites (reserved from pie filling recipe)
1/2 teaspoon vanilla
1/4 teaspoon cream of tartar
6 tablespoons granulated sugar

JOLEAN'S CROCK POT SPANISH CHICKEN

This is a recipe that my Mom always made for us in the 70's, which I found in her original 1970 Crock Pot Recipe Booklet (with the page "dog-eared" and check-marked), and over the years has been tweaked just a bit for our own tastes...Super easy, and since I've been married (and divorced) twice now, I can honestly tell you that it is a "Man-Pleaser" as well as a kid-friendly recipe. I make this at least a couple of times every month, and they always ask me when I'm going to make it again! Really tasty, and easy too, since you dump everything in the crock pot in the morning and when you all come home from work or school, the house smells amazing!!!

Jolean's Crock Pot Spanish Chicken image

Steps:

  • Wash chicken breasts, drain, and season on both sides with salt, pepper, paprika and garlic powder.
  • Place seasoned chicken breasts in crock pot.
  • Mix tomato paste and beer together and pour evenly over chicken breasts.
  • Add olives with liquid.
  • Cover and cook on low for 7-9 hours.
  • Serve each chicken breast over a small mound of prepared noodles, and dish sauce (with olives) over each serving. YUM!
  • NOTE: You can also substitute 3/4 cup (6 oz.) chicken stock instead of beer. Makes it a bit more savory and seems to be more tasty for kids that way -- .

1 (6 ounce) can tomato paste
3/4 cup beer, Budweiser is my choice
1 (6 ounce) jar Spanish olives with pimento (with liquid)
1 teaspoon paprika
1/2 teaspoon garlic powder
salt & pepper
1 (16 ounce) bag wide egg noodles, cooked according to pkg. directions, drained and buttered VERY WELL

This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

Jolean's Cheese Potato & Smoked Sausage Casserole image

Steps:

  • Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  • Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  • Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
  • Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
  • NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 teaspoon paprika

JOLEAN'S ITALIAN SAUSAGE CASSEROLE

My Mom used to make this for us, after she was just a little too old to stand in the kitchen for too long...It was one of her favorites that was easy to make, yet tasted like good old-fashioned comfort food...Sure do miss my Mom!!!

Jolean's Italian Sausage Casserole image

Steps:

  • In a 2 quart, ungreased casserole dish, layer twice: 1/2 cooked macaroni, 1/2 cooked sausage, then 1/2 sauce, 1/2 mushrooms, 1/2 shredded cheese. Do the same layering again.
  • Sprinkle Romano cheese on top.
  • Bake in a preheated 350 degree oven for 30-40 minutes, until cheese is slightly browned and casserole is bubbly.

2 cups macaroni, cooked and drained, and tossed with
2 tablespoons butter
1 lb sage sausage, browned, broken into chunks and drained of grease (Weber brand was my Mom's favorite, but I prefer Jimmy Dean's)
1 (16 ounce) jar spaghetti sauce (Classico was the only brand Mom would use for this.)
1 (6 ounce) jar sliced button mushrooms, drained
1 (16 ounce) package shredded mozzarella cheese
1/2 cup romano cheese, grated (Kraft)
