AUTHENTIC BLACK BEAN CHICKEN

Fermented black beans are found in Asian markets and once you buy them, they last pretty much forever! Also called salted black beans, they're used in the black bean chicken you order from Chinese take-out and has a much different flavor than the Mexican type of black beans. Authentic Black Bean Chicken image

Steps:

  • Cut the chicken into bite sized chunks; put them in a bowl and add salt and soy sauce; mix well and set aside.
  • Heat peanut oil in the wok over high heat; add the chicken and stir-fry until it changes color, then remove from the wok with a slotted spoon.
  • Drain off all but 3 tablespoons oil from the wok, then return it to medium heat; add the ginger and garlic and stir-fry for a few minutes until they are fragrant and the garlic cloves are tender. Add the black beans and stir-fry until fragrant, splashing in the wine as you do so. Add the chili flakes and stir-fry for a few moments.
  • Return the chicken to the wok; add the red bell pepper and toss both in the fragrant oil, splashing in the vinegar and adding salt to taste. When everything is sizzly, throw in the scallions and stir a few times until barely cooked. Then, off the heat, stir in the sesame oil and serve.

1 lb boneless chicken thighs

Chicken with Black Bean Sauce image

Steps:

  • Mix together the egg whites and cornflour and then coat the chicken in that mixture.
  • Heat the oil in a pan and fry the coated chicken until golden and cooked through.
  • Drain the oil from the pan.
  • Blend together the black beans, garlic, ginger, chilli sauce, sesame oil, soy sauce, sherry, oyster sauce and sugar for 30 seconds or until smooth.
  • Pour in the pan and heat gently until it boils.
  • Stir in the water, stock cube and cornflour.
  • Add that into the sauce and stir until the sauce thickens.
  • Toss the chicken in the pan to coat.
  • When done, sprinkle with the shallots and red pepper.

Chicken and Black Bean Nachos image

Steps:

  • Preheat the oven to 400 F.
  • Spread the chips out evenly on a baking sheet. Top with the beans and chicken, then the cheese. Bake until the cheese is bubbly, 7 to 8 minutes. Top with the lettuce, salsa, sour cream, guacamole, cilantro and pickled jalapenos.
  • Preheat the oven to 400 degrees F.
  • Slice the top off the head of garlic. Place the garlic on a sheet of aluminum foil and drizzle with the olive oil. Wrap the garlic tightly. Roast for about 30 minutes, depending on the size of the garlic, until soft and golden brown. Let cool completely. Squeeze the peel of each clove to release the garlic.
  • In a food processor, combine the garlic, serrano, avocados, lime juice, salt and pepper. Pulse until chunky. Transfer to a bowl and stir in the cilantro.

  • Whisk together the light soy sauce, cornstarch, 1 teaspoon of sugar, and pepper in a large glass or ceramic bowl. Add the chicken breast and toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator for 10 minutes.

Steps:

  • Heat 1/2 inch oil in a small heavy skillet over medium heat until shimmering. Fry tortillas one at a time until golden and crisp, 2 minutes per side. Drain on paper towels and sprinkle with salt.
  • Cool the oil slightly and discard all but 2 tablespoons. Add the beans and cumin and cook, stirring, 1 minute. Add the broth and cook, smashing the beans, until saucy and hot. Season with salt and pepper.

Steps:

  • Combine cornstarch, soy, sherry, and 1 teaspoon water in a bowl.
  • Stir and coat chicken with this mix, then add 1 1/2 teaspoons oil and marinate for 15 minutes.

  • Preheat the oven to 350°F (180°C) with the rack in the center position. Heat the safflower oil in a 10-inch (25 cm) skillet over medium-high heat.   • Heat oven to 350°. Lightly grease a 2-quart casserole or spray with nonstick cooking spray.
  • Wash chicken and pat dry. Sprinkle the chicken all over with salt and pepper or a spicy chicken seasoning blend.

This is a really nice one dish recipe that is incredibly easy, and my boys/husband love it. Being that they are not big fans of rice, I considered this one a success. Credit to the OrderingDisorder blog.

Chicken and Rice With Black Bean Salsa image

Steps:

  • Preheat oven to 350.
  • First, start your rice. Brown rice can take up to 45 minutes to cook sometimes (although I like the Uncle Ben's 10-minute brown rice). Time it accordingly so that the rice is finished by the time the main dish is finished.
  • Pour the salsa into the bottom of a 13" x 9" glass baking dish. You can add extra if you want salsa leftover to mix into the rice.
  • Fillet the chicken breasts. Lay them on top of the salsa.
  • Bake for 25 minutes.
  • Remove from the oven and pour the black beans in the baking dish. Bake for another 10 minutes.
  • Take it out again and sprinkle the top with shredded cheese. Bake for another 2 minutes or until the cheese melts.
  • Dish out the chicken and black beans onto plates. Then, mix in the prepared rice into the dish with the leftover salsa and beans, and serve alongside the chicken. Enjoy!
