Steps:
- Place the cubed chicken in a bowl.
- Add the egg white, cornstarch, vodka, and canola oil.
- Stir to coat the chicken, then set aside to marinate while you prepare the rest of the recipe.
- Combine the white wine, soy sauce and chicken stock in a pitcher.
- Heat a large non stick skillet and spray it with cooking oil.
- Add the marinated chicken and cook over high heat until lightly browned.
- Add the scallions, garlic, ginger, red pepper, and asparagus and stir fry for another minute.
- Slowly stir in the liquid and bring to a boil so that the sauce thickens.
- Lower the heat and stir in the mango.
- Cook until heated through.
- Good served over basmati rice.
CHICKEN GISMONDA
Steps:
- Combine bread crumbs and Parmesan; set aside. In small bowl, combine eggs and oil; beat well and set aside.
- Cut diagonal slices through skin side of chicken breasts and pound lightly until meat is thin, careful not to tear skin. Flour chicken thoroughly and coat with egg/oil mixture, then with bread crumbs and cheese. Pat firmly and set aside on waxed paper.
- Heat 1-ounce clarified butter in frying pan and add mushrooms, then add lemon juice, salt and pepper. Cook about 7 minutes, then drain off excess butter. Add sherry and shake to heat through.
- In another saucepan, melt fresh, salted butter and add washed (but not dried) spinach, 1 layer at a time, seasoning each layer with salt, pepper and nutmeg. Cook on medium heat for about 6 minutes, then drain immediately and keep warm.
- Meanwhile, heat remaining clarified butter in large pan and fry chicken breasts on medium heat, about 4 minutes each side, add mushroom sauce and shake to heat through.
- To serve, place pile of spinach on plate, cover with chicken and sauce.
CHICKEN AND ASPARAGUS PARMESAN

- Preheat oven to 425 degrees.
- Season chicken, if desired, with salt and ground black pepper. Combine bread crumbs, Parmesan cheese and salt in shallow dish. Dip chicken in eggs, then bread crumb mixture.
- Heat olive oil in 12-inch nonstick skillet over medium-high heat and cook chicken, turning once, 8 minutes or until chicken is thoroughly cooked.
- Evenly spread 1 cup Sauce in 13 x 9-inch baking dish, then arrange chicken. Evenly spoon 1/2 cup Sauce on chicken, then top with asparagus and mozzarella. Bake 10 minutes or until cheese is melted and sauce is bubbling. Top, if desired, with shaved Parmesan cheese. Serve with remaining Sauce, heated.
NICKEY'S CHICKEN N ASPARAGUS SOUP
A very light, simple chicken soup. Time does not include time to bring stock to boil ... might add another 5 minutes? Hehehe, I know I shouldn't write this here because you might not want to try it! Here's my friend's reaction even though I warned him that it was mildly flavored and easy on the stomach...and that he might want to add the very ingredients that he did! "About the soup...hehehe...I boiled the chicken in water for the broth, then added the chicken stock, shredded chx and asparagus. Well, the flavor just wasn't there and so I added a little salt then shoyu...something is missing...Aha, a little bit of dashi, the one with no MSG. Suddenly it changed the whole flavor! Auwe! Jam-up! And SO I decided to add sesame oil. Now this soup has gone through a metamorphosis...I call this soup: Oriental flavored Chicken Asparagus Soup. Guess I'll be bringing the soup to work for lunch."

Steps:
- Bring stock to a rolling boil in a medium size pot.
- Combine chicken and cornstarch paste in small bowl; set aside.
- Cut off and discard tough ends of asparagus. Diagonally slice tender parts into short lengths -- about 1 to1-1/2 inch lengths.
- Add the asparagus to the boiling stock. Bring to a boil and simmer for 2 minutes.
- Add the chicken to the pot, stirring to separate. Bring back to a boil and simmer for another 2 minutes.
- Add pepper to your taste. Serve hot.
- NOTE: A little cilantro to garnish and flavor is nice.

This is something I have made for years. My hubby loves it and my picky 7 year old requests it often. It is so easy but tastes harder. You can also easily double the recipe. This is one of my favorites!

- Cut chicken into bite sized pieces.
- Sprinkle chicken with pepper.
- Cook chicken in hot oil till white, about 10 minutes then drain.
- Put asparagus in medium sized baking dish.
- Mix soup, lemon juice, mayo and chicken and pour onto asparagus.
- Top with cheese.
- Cover and bake at 375°F for 30 minutes or untill bubbly.

- Combine soy sauce, 2 tablespoons olive oil, paprika, and salt in a bowl. Add chicken strips and let marinate while preparing the remaining ingredients.
- Heat the remaining 1 tablespoon of olive oil in a wok. Add bell pepper and stir-fry for 3 minutes. Add scallions and cook for 2 more minutes. Remove chicken from marinade and add to the wok; discard marinade. Cook, stirring occasionally, until chicken is cooked through and no longer pink in the centre, 10 to 15 minutes.

- Cut each pastry sheet into 4 strips, and cut each strip crossways to give 3 rectangles.
- Roll each rectangle on lightly floured surface until they measure approximately 3" x 6".
- Combine the chicken, asparagus sour cream, chives (or spring onions) and cheese in a bowl.
- Season with salt and freshly ground black pepper.
- Spoon a teaspoon of the mixture onto each rolled out pastry rectangle.
- Lightly brush the edges with egg and fold in the long sides first before folding in the ends to form'parcels'.

- Mix flour, salt, baking powder, and baking soda together in a large bowl. Add water and 1/4 cup vegetable oil; mix with an electric mixer until well combined and a dough begins to form, about 3 minutes. Remove dough and knead on a lightly floured surface for about 3 minutes. Wrap in plastic wrap and set aside for 15 minutes.
- Meanwhile, heat 2 tablespoons oil in a large skillet over medium-high heat. Add shredded chicken and saute until heated through, about 2 minutes. Add onion, bell pepper, cilantro, olives, garlic, sazon seasoning, tomato paste, salt, and pepper and cook, stirring occasionally, until vegetables have softened, about 10 minutes. HUNGARIAN CHICKEN PAPRIKASH
Csirke Paprikas is the Hungarian term for this delicious dish. My mom has been making this for 35 years! Recently she went to visit Budapest and found this little cafe that served it. She liked it so well, she modified her recipe to closely match that, and here it is, enjoy! Serve over rice or egg noodles.

- Place a large pot or Dutch oven over medium heat and cook bacon until crisp, about 4 minutes. Add onion and cook until soft and translucent, 3 to 5 minutes, stirring once or twice. Add chicken and tomatoes. Cover and cook over medium-low heat for 10 minutes. Stir in paprika. Pour in 1/2 cup to 3/4 cup water and season with salt. Cover and simmer over low heat for 25 minutes. Remove lid and cook an additional 5 minutes.
- Transfer chicken to a plate and keep warm. Mix sour cream and 1 teaspoon cold water together in a small bowl. Add mixture to the pot and stir until gravy is evenly colored and smooth. Return chicken to the pot, cover and simmer on low for another 30 minutes.
- Meanwhile, stir flour and salt together in a bowl. In a separate bowl mix egg and water together. Gradually add flour mixture and stir together until dumpling batter is very thick and mixture breaks from a spoon.
- Bring 2 quarts of water to a boil in a large pot. Add 2 teaspoons salt.
- Drop 1/2 teaspoons of dumpling batter into the boiling water. Dumplings will rise to the surface in about 1 minute; boil for 5 minutes more. Use a slotted spoon to transfer dumplings to a bowl. Repeat steps until batter is used up and all dumplings are cooked. Mix 1 teaspoon of butter with cooked dumplings. Add dumplings to chicken mixture in the pot and allow to heat through.

- Fill a large pot with water and bring to a boil over high heat. In a large bowl, mix together the eggs, 2 teaspoons of salt, and 1/2 cup of water. Gradually stir in 2 1/2 cups of flour to make a stiff batter. Using two spoons, scoop out some batter with one spoon and use the second to scrap off the spoonful of batter into the boiling water. Repeat until several dumplings are cooking. Cook dumplings for 10 minutes or until they float to the top; then lift from the water and drain in a colander or sieve. Rinse with warm water.
- In a large skillet over medium-high heat, melt butter and add chicken; cook until lightly browned, turning once. Add onion to skillet and cook 5 to 8 minutes more. Pour in 1 1/2 cups of water, and season with paprika, salt, and pepper; cook 10 minutes more, or until chicken is cooked through and juices run clear. Remove chicken from skillet and keep warm.
- Stir 2 tablespoons of flour into sour cream; then slowly stir into the onion mixture remaining in the skillet. Bring the mixture to a boil, stirring constantly, and cook until thickened.
- To serve, add dumplings to the sour cream/onion mixture, then spoon onto dinner plates adding a piece of chicken.

- Put the margarine in a large saucepan over medium heat.
- When the margarine melts, add the asparagus from one can only, discarding the juice.
- Then add the flour, mix with a wooden spoon and cook for 3-4 minutes, stirring frequently.
- Gradually add the hot chicken stock, whisking constantly.
- Season to taste with salt and pepper, bring to a boil and continue to cook uncovered for 10 minutes.
- Remove from the stove and strain the chicken veloute through a sieve.
- Dice the asparagus from the second can, place it in the chicken soup, sprinkle with chopped parsley and serve.
