GRILLED CHINESE PORK CHOPS
From Chinese Food Site by Lila Voo. The timing does not include marinating overnight. Serve with fried rice and stir fried green beans. I have reduced the hoisin sauce from 1 cup to 1/2 cup. Also have reduced the sherry wine from 2 tablespoons to 1 1/2 tablespoons. Reductions posted after the first six reviews.

- 5-Spice Pork With Bok Choy and Green Onions. This 5-spice pork with bok choy and green onions may have just a few ingredients, but it is packed with lots of flavors—mainly thanks to the Chinese five-spice powder, an aromatic mixture of spices including star anise, Szechwan peppercorns, fennel seeds, cinnamon, and cloves.
- Mu Shu Pork. This Northern Chinese mu shu pork dish incorporating mushrooms, bamboo, and spring onions has a rich flavor due to the fact that the pork is marinated for 30 minutes in a dry sherry mixture.
- Yangchow Pork Fried Rice. This dish is milder than Cantonese fried rice as it doesn't include any soy sauce or oyster sauce. Instead, pork combined with shrimp, yellow onion, and peas are simply seasoned with salt and pepper, allowing these ingredients to shine through.

- Using a meat tenderizer or the back of a heavy knife, beat the pork chops until they are 1/4” (1/2 cm) thick. (Optional: cut 4 or 5 slits along the edge of the pork chops. This will help prevent the pork chops from curling while cooking). Spread the pork chops into a large ziplock bag (gallon bags work the best) with as little overlapping as possible. Or you can use appropriately sized tupperware containers.
- Add 2” (5 cm) oil into a tall pan (or a fryer) that’s just big enough to fit the pork. Heat the oil to 350°F (176°C) over medium-high heat. Add the sweet potato starch onto a plate and spread it into an even layer. Prepare a rack-lined tray or a plate with a paper towel.
- To store the pork chops, let them cool completely before transferring them to a container. Store them in the fridge for up to 4 days or in the freezer for up to 2 months.

- In a medium sauce pan, mix the honey, brown sugar, Hoisin sauce, 5-spice powder, red food coloring, vegetable oil, sherry, tomato paste and soy sauce and heat to a simmer and cook three minutes then remove and cool completely.
- While the marinade is cooling, remove any visible fat or gristle from the pork. There are two methods to cutting it up. Either cut along the natural lines and remove fat between each piece or simply cut in half the long way then each half in half again the long way so you have four log shaped pieces. I chose the first method so I could use the small pieces for some other Chinese dishes and the large pieces for this dish, but totally up to you.
- Place the meat in a gallon zip lock bag with the cooled marinade and marinate at least one day and up to four days ahead. This isn’t like a brine where the length of time in the mixture usually would not surpass 12-24 hours, this is a marinade and the meat can stay refrigerated in the marinade for up to four days.
