Steps:
- Spread almonds in a large skillet; toast over medium heat until starting to brown, 3 to 5 minutes. Pour almonds into a bowl.
- Melt chocolate in top of a double boiler over simmering water, stirring frequently and scraping down the sides to avoid scorching, about 5 minutes. Remove from heat; pour in almonds and stir until evenly coated.
- Drop spoonfuls of chocolate-almond mixture onto a plate lined with waxed paper.
- Chill until set, about 10 minutes.

- In a heavy saucepan over low heat, melt chocolate chips with milk, stirring occasionally. Remove from heat. Stir in granola and almonds. - In a large bowl, cream butter and sugar until light and fluffy. Beat in extract. Combine flour, baking soda, baking powder and salt; gradually add to creamed mixture. - Set a pot of water over medium heat and bring to a boil. Add a double boiler to the top of the pot and lower heat to a simmer.
- Add chocolate and coconut oil to the double boiler. Stir until chocolate is melted.
- Place a drip rack over a parchment-lined pan. Place almonds on top of the drip rack. Pour chocolate over the almonds. Allow chocolate to dry.
- Once dry, store almonds in a resealable container.

CHOCOLATE DROP ALMOND COOKIES
My friend and I make holiday cookies every December. We have "played around" with this recipe and this is the best yet.. The glaze is not necessary, as the cookies are filled with flavor. We also used a tabletop electric mixer to mix the ingredients.

- 1. Preheat oven to 375 degrees. Lightly coat baking sheets with oil or cooking spray. (Or use non-stick baking sheets)
- 2. In a large mixing bowl, cream together butter, brown sugar and egg. Blend in apple sauce, vanilla and almond extract.
- 3. Add almonds and blend in (Just before placing on cookie sheets.
- 4. In a medium mixing bowl, sift together flour, cocoa, baking powder and baking soda.
- 5. Stir dry ingredients into butter mixture.
- 6. Drop by rounded teaspoonfuls onto cookie sheets. (about 15 to a sheet).
- 7. Bake 8-10 minutes, or until cookie "springs back" when lightly touched.
- 8. Transfer to cooling racks to cool completely.
- 9. Optional glaze: Combine 1/4 cup confectioners sugar and 1/4 tsp almond extract. Add water, a few drops at a time until desired consistency is reached. Drizzle over cookies.
ALMOND DROPS

- Place the almond paste, corn syrup and apricot puree in the bowl of a stand mixer fitted with a paddle. Turn on the mixer to medium speed and add about 1 egg white, continue adding egg white gradually until the mixture can be piped through a piping bag. You will need to adjust the amount of egg whites added to the mixture depending on the consistency of the almond paste. Place the mixture into a piping bag fitted with a star tip. Pipe the mixture onto a parchment paper lined baking sheet. Use any design you like when you are piping the mixture. You can place whole almonds on top of some to achieve a different design.
- Preheat the oven to 380 degrees F and bake for 8 to10 minutes, until lightly golden brown.
- Place the sugar, honey and water in a saucepan and bring to a strong boil. Place the almonds in the food processor and grind until coarse. Remove the boiling sugar from the heat and pour over the coarse almonds. Blend until smooth. This may take 10 minutes or more, depending on the strength of the food processor. Remember, food processors are not usually strong enough to yield the same consistency as the almond paste that you can buy. If your mixture is too thick and the food processor is straining, you can add a little Kirsch or simple syrup to the processor. Add the liquid slowly and stop when the processor is moving more freely. The quality of almond paste is determined by how smooth the consistency is.
- Wrap the almond paste in plastic wrap and allow it to cool. When you are ready to use it, knead in the butter. The butter makes it smooth and not so sticky.
- Yield: About 2 cups

- Preheat oven to 300°F (149°C). Line a large baking sheet with parchment paper or a silicone baking mat. Spread almonds out in a single layer and toast for 10-12 minutes, stirring once during that time. Set aside.
- Melt the chocolate in a double boiler or (carefully!) use the microwave. For the microwave, place the chocolate in a medium heat-proof bowl. Melt in 30 second increments, stirring after each increment until completely melted and smooth. Alternatively, you can temper the chocolate. If tempering, do not store finished nuts in the refrigerator.
- Stir the almonds into the chocolate, making sure to coat each one. On a large lined baking sheet, drop a spoonful of the coated almonds. (Spoonful can be as large or small as you’d like. My clusters had about 10-12 almonds each in them.) Sprinkle with a little sea salt and turbinado sugar, then allow chocolate to completely set. I placed the baking sheet in the refrigerator to speed it up!

- Place the chocolate in a large heatproof glass bowl and melt, on low-power, in 15 second increments, stirring after each increment, until completely melted. You may also melt the chocolate using a double broiler, if you prefer.
- Whisk the chocolate smooth and add in almonds; use a spatula to stir, making sure each almond is coated in chocolate. Use a spoon to scoop clusters of the almonds onto the prepared baking sheet. You can make them as large or small as you'd like, but I find 2 tablespoons to be the perfect size.
