ORANGE-ALMOND CHOCOLATE LOGS

A sure hit for the holidays, these lovely logs from our Test Kitchen staff feature the can't-beat combination of almond, orange and chocolate.

Orange-Almond Chocolate Logs image

Steps:

  • In a small bowl, cream the butter, almond paste and 1/2 teaspoon orange zest until light and fluffy. In a microwave, melt white baking chocolate; stir until smooth. Gradually add to creamed mixture. Slowly stir in orange juice. Beat until smooth. Cover and refrigerate for 20 minutes or until easy to handle, stirring occasionally., Shape into 2-in. logs; place on waxed paper-lined baking sheets. Loosely cover and refrigerate for 30 minutes or until firm. Combine coarse sugar and remaining orange zest; set aside., In a microwave, melt chocolate chips and shortening; stir until smooth. Dip logs in chocolate, allowing excess to drip off. Place on waxed paper-lined baking sheets. Sprinkle with sugar mixture. Let stand until firm.

Simple Chocolate-Covered Almonds image

Steps:

  • Set a pot of water over medium heat and bring to a boil. Add a double boiler to the top of the pot and lower heat to a simmer.
  • Add chocolate and coconut oil to the double boiler. Stir until chocolate is melted.
  • Place a drip rack over a parchment-lined pan. Place almonds on top of the drip rack. Pour chocolate over the almonds. Allow chocolate to dry.
  • Once dry, store almonds in a resealable container.

Steps:

  • Prepare the Ultimate Cookie Dough and divide it into four equal parts. Wrap in plastic and chill for 30 minutes or refrigerate up to 4 days. Cover a cookie sheet with parchment paper, or use a clean, ungreased baking sheet. Place the egg white into a shallow dish or pie pan. Mix the almonds and sugar into another shallow dish or pie pan.
  • Remove one portion of the dough from the refrigerator and knead lightly until it is pliable. Divide the dough into 2 parts. Shape each part into a strand about 12 inches long.
  • Dip each strand first in the egg white, coating the strand on all sides, then roll the strand in the almond sugar mixture. Place the coated strands on the prepared baking sheet and cut each strip into 8 equal pieces. Separate each cookie slightly for baking.
  • Bake at 350 degrees for 15 minutes until very lightly browned.

Steps:

  • Heat oven to 350 degrees. Toast almonds for 15 minutes on a baking sheet. Line two baking pans with parchment paper; set aside.
  • In a medium saucepan, combine granulated sugar, 1/4 cup water, toasted almonds, and cinnamon. Cook, stirring constantly, until sugar becomes golden and granular and almonds are completely coated and separated. Pour nuts onto prepared pans. Chill in freezer, about 15 minutes.
  • Meanwhile, place chocolate in a medium bowl; place bowl over simmering water until melted. Transfer half the chilled almonds to a large bowl, and pour half the melted chocolate over nuts. Stir until nuts are thoroughly coated. Transfer nuts onto prepared baking pan. Using two forks, separate nuts so none stick together. Return almonds to refrigerator until chocolate has set, about 20 minutes. Repeat with remaining almonds.
  • Place cocoa powder and confectioners' sugar into two separate bowls. Toss half the nuts in cocoa and half in sugar, and gently tap off any excess powder. Store separately in airtight containers for up to 1 month.

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in almonds and vanilla. In another bowl, whisk flour, cocoa and salt; gradually beat into creamed mixture. Refrigerate, covered, 2 hours or until firm enough to shape., Preheat oven to 350°. Shape 2 teaspoons of dough into 2-in.-long logs; form each log into a crescent. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until set.
