BETTER BAKED BEANS
Tangy, sweet old fashioned baked beans, are made the easy way in this side dish. This is my grandma's favorite semi home-made recipe. She makes it every Thanksgiving, and we usually end up scraping the pan clean! Never any leftovers!

Steps:
- Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
- Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.
THE BEST BARBECUE BAKED BEANS
It's not a real barbecue until a dish of baked beans shows up! While there are many different versions and many different techniques, I'm here to tell you that these are the best. These are the tastiest, most satisfying, the easiest, and the meatiest. They not only make a great side dish, but if the budget's a little tight, these will absolutely work as a main course. Sprinkle the top with sliced green onion if you like.

Steps:
- Add dry beans to a bowl, cover with water, and let soak for 8 hours, or overnight.
- Drain beans and transfer to a large pot filled with 3 quarts of cold, fresh water. Add bay leaf, pork shoulder, and onion. Bring to a simmer over high heat. Reduce heat to medium-low and stir. Skim off foam if desired. Let simmer until beans are just tender, about 1 hour.
- While beans simmer, combine barbecue sauce, ketchup, vinegar, brown sugar, molasses, mustard, Worcestershire, smoked paprika, cayenne, black pepper, kosher salt, and garlic powder in a bowl with a whisk. Set aside until needed.
- Preheat the oven to 350 degrees F (175 degrees C).
- Transfer tender bean mixture to a deep, 15x10-inch baking dish using a spider strainer. Pour in barbecue sauce mixture and 2 ½ cups of the bean cooking liquid. Place bacon slices on top.
- Bake uncovered in the center of the preheated oven until the liquids have reduced into a thick sauce, 2 to 3 hours.

BEST BAKED BEANS
These beans are truly the most fantastic baked beans we have ever had. I can't even begin to describe them. I even had them for lunch as a main dish. We used leftover smoked pulled pork, but you can substitute 1/2 pound crumbled cooked sausage if you don't have any on hand.

OLD TIME BAKED BEANS
These are the beans my French-Canadian mother used to make. She never measured anything making these so I've estimated the amounts. These taste great with fresh bread. A good dish to keep in mind for pot-lucks. You can add pork or weiners to it if you like. Bacon strips on top work well.

GARRETT'S FAVORITE BAKED BEANS
A very sweet version that starts with ordinary canned pork&beans. Your nutritionist and you dentist won't approve of the ingredients, but it's been my son's favorite for many years. Eerily similar to the one published in the 1967 Joy of Cooking - and there's a reason for that. (I'm posting it so he can look it up when he plans a cookout.)

Steps:
- Heat the oven to 350 degrees. Pour the canned beans (undrained) into a large bowl. Add ketchup, molasses, brown sugar. In a microwave or small skillet on the stovetop, cook the bacon, remove from the fat when done. Add minced onion to the bacon fat and let it cook briefly until it appears translucent, then put the bacon fat, cooked onion and crumbled bacon into the bowl with the beans. Add some salt and hot pepper sauce - or not, depending on your mood. Mix the bowl contents throughly, then USE A SLOTTED SPOON to transfer the beans to a baking dish, preferably a shallow one. (You'll leave lots of thick syrupy stuff in the bowl and your mission is to find a way to dispose of it.) Bake the beans COVERED (aluminum foil works) for 30 minutes. Remove the cover and continue baking for another 30 minutes.
- * To make the traditional baked beans and hot dog dinner (the nutritionist is now dialing 9-1-1), make a lengthwise slash in each hot dog and gently place the dogs on top of the beans when you take the cover off the dish, so that they cook with the beans for the last 30 minutes. While everything is baking, call your doctor to schedule glucose tolerance and cholesterol tests.
- *Other notes: A few tablespoons of barbecue sauce can be substituted for part of the ketchup. The recipe can easily be halved, doubled, tripled, altered, deleted, or ignored.
