CHOCOLATE APPLESAUCE CAKE III
This is an extremely moist cake that ranks right up there for all the chocoholics in my home. It does not need to be frosted because it is sprinkled with chocolate chips and walnuts before baking. Easy AND delicious!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, cocoa, baking soda and salt in a bowl. Set aside.
- In a large bowl, cream the butter and sugar together until light and fluffy, using an electric mixer set on medium speed. Beat in the eggs one at a time. Blend in the vanilla extract. Beat in the flour mixture alternately with the applesauce.
- Pour the batter into a 9x13 inch baking pan. Sprinkle with the chocolate chips and chopped walnuts. Bake at 350 degrees F (175 degrees C) for 35 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool in the pan on a wire rack.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 10x15 inch baking pan.
- In a large mixing bowl, combine the applesauce, sweetened condensed milk, butter or margarine, eggs, melted chocolate, and vanilla extract. Add the baking mix and cinnamon, and mix well. Stir in nuts. Pour batter into prepared pan.
- Bake for 25 to 30 minutes, or until a wooden pick inserted near the center comes out clean. Frost when cool.

- In a bowl, cream the butter or margarine with the sugar. Beat in the milk, applesauce, and 2 tablespoons of rum.
- In another bowl, stir together the flour, cocoa, baking soda, spices, and salt. Beat into the creamed mixture and then stir in the raisins and pecans.
- Turn the batter into a greased and floured 9x13 inch baking pan. Bake the cake in a preheated 350 degrees F (175 degrees C) oven for 45 minutes, or until it tests done with a toothpick.
- Immediately after removing the cake from the oven, sprinkle it with the remaining 1/4 cup rum. Let cool on a rack. This cake improves if allowed to sit for a day or so before eating. Serves 20.

The original recipe makes 6 individual sized chocolate cakes which is fine for a dinner party, but for everyday snacking, I prefer to make this in a Bundt pan. It is a very moist, delicious cake that keeps well for several days.

- Preheat the oven to 325 degrees F.
- Grease and sugar a 10-cup Bundt pan.
- Beat the butter, oil and sugar with an electric mixer until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Beat in the vanilla.
- In a separate bowl, sift the flour, cocoa, baking soda, salt and cinnamon.
- Whisk the buttermilk and applesauce together.
- Add the flour to the butter mixture, alternating with the applesauce mixture, mixing well after each addition.
- Stir in the chocolate chips.
- Spoon the batter into the prepared pan and bake for 60 to 70 minutes, until a toothpick inserted comes out clean.
- Cool the cake in the pan for 15 minutes, then turn out onto a cooling rack to cool completely.
- For the glaze, heat the cream to just below a simmer and pour over the chopped chocolate.
- Let sit for one minute then stir to smooth out.
- Stir in the butter to melt in and thicken the glaze.
- Pour over the top of the cake and let drip down the sides.
- Garnish with the hazelnuts.

- Pre-heat oven to 325 degrees. Grease and flour a bundt cake pan. Note: You can use other cake pans, but because this cake is a bit heavy, layered cake pans are not recommended.
- Mix all of the dry ingredients together in a large bowl.
- Add applesauce and mix well until batter is smooth.
- Bake for 50-55 minutes, until done. You can always tell that a cake is finished baking by sticking a toothpick in the center of the cake. If the toothpick comes out clean, that is, not covered in batter, then your cakes is done baking.
