COFFEE CHOCOLATE TRUFFLES

Very Delicious! I usually halve this recipe; this makes 48 truffles.

Coffee Chocolate Truffles image

Steps:

  • 1. Mix coffee and hot water, let stand about 5 minutes.
  • 2. In double boiler, melt chocolate chips. Add cream cheese, (coffee and water) and mix well.
  • 3. chill until firm enough to shape. Shape into 1 inch balls and place on wax paper-lined cookie sheet. Chill 1-2 hours until firm.
  • 4. Melt chocolate coating in double boiler. Dip balls and place on wax paper to harden. If desired, melt white coating and drizzle over.
  • 5. Truffles can be frozen for several months before dipping in chocolate. Thaw in refrigerator before dipping. I usually halve this recipe, this makes 48 truffles.

2 pkg (12 ounces each) semi-sweet chocolate chips
1 pkg (8 ounces) cream cheese, softened
3 Tbsp instant coffee granules
2 tsp water
1 lb dark chocolate confectionary coating

Chocolate Truffle Pots de Creme image

Steps:

  • 1. Arrange eight 4-ounce ramekins or small coffee cups on a baking sheet. Heat the half-and-half, sugar and salt in a pot over medium heat until it just comes to a boil. Whisk the egg yolks with the cognac and vanilla in a medium bowl. Whisk about 1/2 cup of the hot half-and-half into the yolks until smooth and then whisk the egg mixture back into the pot. Continue to cook until the mixture thickens slightly, stirring constantly, 2 to 3 minutes. Place the chocolate in a large bowl and pour the hot cream mixture over the chocolate. Whisk until smooth and then lightly stir to remove any air bubbles.
  • 2. If the mixture is not completely smooth, pour through a strainer and then divide evenly between the ramekins. Chill until cold and set, at least 2 hours or overnight. Serve with a dusting of cocoa powder, whipped cream and/or a sprinkle of nuts, coconut or chocolate curls.

2 1/4 cups half-and-half
1/4 cup sugar
1/4 teaspoon kosher salt
5 egg yolks
1 tablespoon cognac or flavored liqueur, such as Frangelico or Grand Marnier
1 teaspoon vanilla extract
Two 4-ounce bars semisweet chocolate, chopped
Whipped cream, cocoa powder, chopped toasted walnuts, chocolate curls, toasted coconut for garnish

This recipe has been passed down from my grandmother to my mother and to me - and it makes the yummiest easiest truffle you could wish for - these never last longer than 2 days in our house - they have a very subtle coffee flavour so they are a favourite of everyone who tries them!

Steps:

  • Melt copha.
  • Crush biscuits finely and place in bowl with cocoa, coffee powder and icing sugar.
  • Mix in condensed milk and vanilla essence.
  • Add copha and stir quickly before mixture sets.
  • if too hot or wet - allow mixture to cool in the fridge before rolling into walnut size truffles and rolling in vermicelli.

Steps:

  • Heat cream in a pot until it steams. Put chocolate in a bowl, pour hot cream on top, and stir until chocolate is melted and incorporated into cream.
  • Chill until solid all the way through, 1 to 2 hours. Using a chilled melon baller or latex gloves to prevent the ganache from melting or sticking to your hands, scoop out about a tablespoonful and quickly roll it into a ball. Repeat, lining truffles on a plate or a baking sheet.
  • If truffles become too soft to handle, place them in refrigerator or freezer for a few minutes. Roll them in cocoa powder, confectioners' sugar or a mixture of sugar and ground cinnamon. Serve immediately or store, wrapped in plastic, in refrigerator for up to four days.

7/8 cup heavy cream
8 ounces good quality bittersweet chocolate, chopped
Unsweetened cocoa powder as needed
