Steps:
- Mix oat bran and water, let stand at room temperature for 30-45 minutes .
- (This timing is very important.) Cream margarine, sugar and sugar substitute together until light and fluffy.
- Add egg whites and vanilla and mix at medium speed for 30 seconds Scrape down the bowl Stir flour, cocoa, soda, dry buttermilk and salt together to blend well.
- Add to the creamed mixture along with the oat bran mixture and mix at medium speed to blend.
- Add chocolate chips to dough Drop by tablespoonful onto cookie sheets that have been sprayed with pan spray or lined with aluminum foil.
- Bake at 375° for 12 minutes.
- (The cookies will not be crisp if they are not baked the full length of time.) Remove from hot cookie sheets to wire racks to cool.
- Use 1 cookie per serving.
- This recipe is a good source of fiber.
- Food exchanges per serving (1 cookie): 2/3 bread and 1 fat Low sodium diets: omit salt, use salt-free margarine Low-cholesterol diets: May be used as written.
CHOCOLATE OAT BRAN CAKE (DIABETIC)
A healthy snack cake. Do NOT sub Splenda for the 1/3 cup sugar in the dry ingredients. The sugar helps keep cake moister. Eat plain or with a dollop of sugar-free Cool Whip.

- Mix lightly, in a mixer bowl, the oat bran, water, egg, oil, Splenda, extracts, and vinegar. Let stand 30 to 45 minutes. DO NOT SKIP THIS STEP!
- Preheat oven to 350°F Coat a 9-inch square cake pan with non-stick cooking spray.
- Stir remaining dry ingredients together in a separate bowl to blend well.
- Add dry ingredients to bran mixture and mix at medium speed about 1 minute.
- Spread batter evenly into prepared cake pan.
- Bake for about 35 minutes, or until cake tester comes out clean from center.
- Cool on wire rack. Cut into 16 squares.

There are lots of recipes for chocolate oatmeal, but very few for any type of oat bran... so I decided to create one just to see what happened, and it didn't turn out so bad!! I did use a half-cup measuring cup, but it wasn't completely full so it may have been more like 1/3 cup.

- Mix everything in a big microwave safe bowl.
- Microwave on high for 5 minutes or until done, stopping to stir a few times.
- Top with nuts, nut butters, or more chocolate!
- Fun variations add ins: ginger and apricots, dried or fresh cranberries or blueberries, cinnamon and bacon, fresh cherries with almonds, oranges, all of the above!
- NOTE: I actually use a tiny crock pot for this, letting it cook on the -warm- setting for about 5 hours, stirring occasionally.

CHOCOLATE OAT MILK BUDINO WITH BALSAMIC STRAWBERRIES

- In a medium saucepan, whisk together the oat milk, cocoa powder, vanilla paste, salt and 1/4 cup of the sugar. Place over medium-low heat and bring just to a simmer, whisking occasionally, 3 to 5 minutes.
- In a large bowl, combine the egg yolks, whole egg, cornstarch and 1/4 cup of the remaining sugar. Whisk until thick and pale yellow in color.
- When the oat milk mixture comes to a simmer, temper the eggs by slowly ladling half of the hot oat milk mixture into the egg mixture while continuously whisking. Pour the combined mixture back into the saucepan with the remaining oat milk mixture. Cook over medium-low heat, stirring constantly, until the mixture is thickened and coats the back of a spoon, 6 to 7 minutes. Be careful not to boil the custard mixture.
- Place the melted chocolate in a medium heatproof bowl. Once the custard is thickened, strain in a fine-mesh strainer, over the melted chocolate. Whisk to combine.
- Evenly divide the budino among six 6-ounce jars or glasses. Wrap the glasses with cling film and refrigerate for 3 hours or up to overnight.
- About 30 minutes to 1 hour before serving, combine the strawberries with the balsamic vinegar and remaining 2 teaspoons sugar. Stir to combine and set aside at room temperature.
- When ready to serve, top each budino with the strawberries and a sprinkle of granola.
NO BAKE CHOCOLATE OAT BARS
I baked about 100 dozen cookies for the holidays and these were everyone's favorite!! These bars can be frozen, just thaw 10 minutes before serving.

- Grease a 9x9 inch square pan.
- Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.
- Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or the back of a spoon.
- Crumble the remaining oat mixture over the chocolate layer, pressing in gently. Cover, and refrigerate 2 to 3 hours or overnight. Bring to room temperature before cutting into bars.

- Cream butter, peanut butter and sugars until light and fluffy.
- Beat in eggs and vanilla.
- Combine flour, baking powder, baking soda and salt; blend into creamed mixture.
- Stir in chocolate chips, cereal, bran, rolled oats and peanuts.
