CHOCOLATE CHIP BARS (OR GIFT MIX IN A JAR)

This recipe came from a book with all sorts of mixes that you layer in a quart canning jar to give as gifts. I wanted to try this particular one so I just put everything together in a mixing bowl and didn't bother making a jar. Sometimes the goodies that are in a jar are not that great but these are delicious; they are moist and have lots of yummy flavors. At the end of the recipe in the instructions, I will list how to do the layers if you should want to give this as a gift. You will notice in the layers that there are two of flour, white sugar, and brown sugar. That is just to make it look nice but if you are going to make it without the jar, just follow the instruction that I have listed. Tie a big bow around the top and give as a gift.

Chocolate Chip Bars (Or Gift Mix in a Jar) image

Steps:

  • Cream butter, both sugars, and egg; add vanilla and water.
  • Add the flour, powder, soda, and salt; mix well.
  • Add chocolate chips.
  • Spread in a greased 9x12 pan (9x13 will make them a little thinner).
  • Bake 375 degree oven for 20-25 minutes till done; cool in pan; cut in 2" squares.
  • FOR GIFT GIVING:.
  • In a 1-quart wide-mouth canning jar pack each layer in place before adding the next ingredient.
  • LAYERS:.
  • 1 teaspoon baking powder.
  • 1 teaspoon baking soda.
  • 1/2 teaspoon salt.
  • 3/4 cup flour.
  • 1/4 cup white sugar.
  • 1/4 cup brown sugar.
  • 1 cup chocolate chips.
  • 1/2 cup brown sugar.
  • 1/4 cup white sugar.

  • WRITE A NOTE ON EACH JAR ON HOW TO MAKE IT:.
  • 1 jar Chocolate Chip Bar Mix.
  • 3/4 cup butter--softened.
  • 2 eggs.
  • 1/2 teaspoon vanilla.
  • 1 teaspoon water.
  • Preheat oven to 375 degrees; In large mixing bowl cream the butter and eggs and vanilla; add the Chocolate Chip Bar Mix and stir till blended; spread into greased 9x12 pan and bake for 20-25 minutes; cool in pan and cut in 2" squares.

I used Coffee Mate vanilla-flavor powdered creamer and Nestle Nesquick, I am not certain if they sell this in the States, if not use similar products, also plain powdered cream can be used in place of vanilla, but the vanilla is better lol! Here's what to do to give as a gift; divide the mixture between two 1-quart glass jars, seal and decorate as desired, attach a tag with 1 cinnamon stick (if desired for stirring) with the following instruction...For hot cocoa, dissolve 1/3-cup mix in 1 cup (or more) boiling water, stir with cinnamon stick and enjoy!

  • In a bowl, cream butter and brown sugar. Add egg, milk and vanilla; mix well. Combine flour, baking powder and salt; add to creamed mixture. Stir in 1/2 cup chocolate chips and walnuts. Steps:

  • In a medium bowl, stir together the flour, baking soda, salt and cinnamon. In a 1 quart glass jar, layer the ingredients in the following order: Flour mixture, walnuts, 1/2 cup of the mini candy coated chocolates, raisins, oats, remaining candies, and brown sugar. Pack down well after each addition and attach a tag with the instructions.
  • Enclose a card with the following instructions: 1) Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets; 2) In a large bowl, cream together 3/4 cup of butter, 1 egg and 3/4 teaspoon of vanilla until light and fluffy. Stir in the contents of the jar until well blended. If you compare these chocolate energy bars to similar fruit/nut bars sold at the store, I think they taste better, are nutritionally superior, and probably cheaper to make at home. The only problem is they look so good it takes your brain a millisecond to process that they're not going to taste like the fudge brownies they resemble.

Steps:

  • Place cashews, almonds, coconut, dates, cocoa, coconut oil, vanilla, cold coffee, cayenne and salt in the bowl of a food processor. Pulse on and off to start. Process about 1 minute; check to ensure mixture is sticky and moist enough to stick together. Add more coffee if needed. Continue to process until mixture becomes a chunky mass.
  • Line a baking pan with plastic wrap. Scoop mixture into pan. Press down with a spatula until mixture is even. Place a layer of plastic wrap on the surface and smooth again with your hands.
  • Refrigerate until cold and firm, 2 or 3 hours.
  • Remove from the pan and unwrap. Cut into bars of your preferred size. Store in a zip top back in the refrigerator.
