DARK CHOCOLATE NUT BARS
Steps:
- Preheat the oven to 350 degrees F. Brush an 8-by-8-inch dish with 1 teaspoon of the coconut oil and set aside.
- Combine the coconut flakes, hazelnuts, walnuts, cashews, trail mix and flaxseed and spread into an even layer on a baking sheet. Toast until lightly golden, 10 to 12 minutes, then transfer to a large heatproof bowl. Set aside.
- In a small saucepan, combine the maple syrup, honey and 1/2 teaspoon salt and bring to a boil over medium-high heat. Cook, stirring occasionally, until the temperature on a candy thermometer reads 260 degrees F, about 5 minutes. Immediately pour over the nut mixture and stir to coat. Use a rubber spatula to press the mixture into the prepared dish and let cool until set, about 30 minutes.
- To make the chocolate drizzle, combine the chocolate chips and remaining 1 teaspoon coconut oil in a medium heatproof bowl and place over a small pot of simmering water. Heat, stirring, until melted and smooth. (Alternatively, combine the chocolate and oil and microwave in 15-second intervals, stirring often, until melted and smooth.)
- Drizzle the chocolate over the mixture. When set, cut into bars and serve.

- Preheat the oven to 350 degrees F. Cut a piece of foil 9- by 23-inches. Butter the corners and sides of a 9- by 9-inch baking pan. Line the pan with the foil, leaving an overhang on two sides. Fold the overhanging foil to make them doubly thick. (This will make it easier to lift the bar out of the pan.)
- For the topping: Whisk the coconut cream with the egg white and vanilla in a medium bowl. Toss the shredded coconut with the flour in another medium bowl. Stir the shredded coconut mixture into the coconut cream mixture. Set aside.
- For the base: Whisk the flour with the cocoa powder and salt in a small bowl. Put the cookie dough on a clean work surface and dump the flour mixture on top. Knead the flour mixture and dough together until it is dark and homogenous. Sprinkle a little extra flour on the work surface, and use a rolling pin to gently press and roll the dough into a 7- or 8-inch square; don't worry if it cracks a bit. Put the dough in the prepared pan, using your fingers to press it evenly into the sides and corners.
- Scatter the coconut topping evenly over the base, making sure you cover the edges well and being sure not to press down so that the coconut mixture lies on top of the dough. Scatter the chocolate on top and press it lightly into the coconut. Bake until the coconut is a toasted golden brown, the topping seems dry and a toothpick inserted in the center comes out clean, about 30 minutes. Cool completely on a rack before gently lifting out of the pan by the overhanging foil, about 20 minutes. Slice into 16 square bars.

- Grease a 9x9 inch square pan.
- Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.

TOFFEE NUT BARS, A VINTAGE RECIPE
A great bar cookie recipe, not gooey or chewy. There is a chopped nut base, then a crumb layer, then a thin spongy spicy cake-y layer. The amounts of spices can be adjusted to your taste. These work pretty well for me. From the archives in my collection. My daughter requested these, reminding me that I used to make them a lot. Things do get mislaid, though. And/or forgotten. FUDGE NUT BARS

- Cream butter and sugar. Mix in eggs and vanilla extract. In a separate bowl, sift flour, baking soda and salt together. Stir in oats. Add creamed mix to dry ingredients. Stir well and set aside.
- Melt chocolate chips in saucepan. Over low heat, stir in condensed milk, butter and salt. Add walnuts and vanilla. Spread 2/3 of oat mix in 9"x13" pan. Cover with chocolate mix. Dot with remaining oat mix and swirl. (Chocolate will not all be covered.) Bake at 350 degrees for 25 min. until top is browned. Let cool and cut into bars.
TOFFEE BARS
My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

- Preheat the oven to 350 degrees F.
- In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
- Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.

- Preheat oven to 350.
- Line 8" square baking pan with foil, pressing foil into corners to cover completely and leaving 1" overhang on sides.
- Spread oats on ungreased baking sheet. Bake 8-10 minutes, or until light golden brown. Let cool, then place in large bowl.
- Reduce oven temperature to 325.
- Spread hazelnuts and walnuts on baking sheet. Bake 9-11 minutes or just until cut sides begin to brown lightly. Let cool, then add to toasted oats.
- Stir in confectionary sugar, then set aside.
- Heat chocolate chips and shortening in small heavy saucepan over very low heat, stirring constantly, until melted and smooth. Remove from heat.
- Spread evenly on bottom of prepared 8" square pan.
- Let stand in cool place 15-20 minutes, or until chocolate mixture begins to set, but is not firm.
- Combine butter and salt in microwavable bowl. Microwave on HIGH 20-30 seconds, or until butter is melted and foamy.
- Stir in corn syrup. Let cool slightly, and add vanilla.
- Stir corn syrup mixture into oat mixture, just until moistened.
- Gently spoon over chocolate, spreading evenly into corners.
- Score lightly into 4 strips, then score each strip into 6 pieces.
- Cover tightly with plastic wrap, and refrigerate at least 4 hours, or until firm.
- Remove bars from pan, lifting foil by edges.
- Place on cutting board; cut along score lines into 24 pieces. Remove foil.
- Store in airtight container in refrigerator.

- Preheat oven to 350° (325° glass pan).
- Grease 9x13 pan.
- To prepare crust, cream all ingredients until very well blended.
- Press evenly into pan.
- Bake for 20 minutes or until light brown.
- Set aside to cool while making the filling.
- Heat milk and margarine on stove, stirring constantly, until thickened.
- This will take 5-10 minutes.
- Spread over crust.
- Bake for 15 minutes, until golden brown.
- Sprinkle evenly with chocolate chips.
- Return to oven for 2 minutes to melt the chocolate.
- Remove from oven and spread chocolate smooth.
- Sprinkle toffee bits on top.
- Using the back of a spoon, gently press the toffee into the melted chocolate.
- Cool completely.
- Cut into bars before refrigerating.

- Line 13x9-inch pan with foil, with ends of foil extending over sides. Combine first 4 ingredients in medium bowl. Cook butter and 1/3 cup peanut butter in small saucepan on medium-low heat 4 to 5 min. or until butter is melted and mixture is well blended, stirring occasionally. Add to oats mixture; mix well. Press onto bottom of prepared pan. Bake 15 min. or until golden brown.
- Cook chocolate and remaining peanut butter in saucepan on medium-low heat until chocolate is completely melted and mixture is well blended. Spread over warm crust; sprinkle with toffee bits.
- Let stand 2 hours or until chocolate is firm. Use foil handles to remove dessert from pan before cutting into bars.
