RUM OR BOURBON BALLS
It isn't Christmas without these!!! They go fast!! Try using bourbon in place of the rum!

Steps:
- Place chocolate chips into a microwave-safe medium bowl. Heat in the microwave for 1 minute, stir and then continue to heat at 20 second intervals, stirring between each, until melted and smooth. Stir in sugar and corn syrup. Blend in rum. Add crushed vanilla wafers and chopped nuts. Mix until evenly distributed. Cover and refrigerate until firm.
- Roll the chilled chocolate mixture into bite-size balls. Roll balls in a mixture of ground nuts and confectioner's sugar, or just plain confectioner's sugar. Store in a covered container for a week before serving to blend the flavors.

CHRISTMAS RUM BALLS(OR BOURBON BALLS)
These balls are so quick and easy to make. They make a nice addition to the baked goodies that you give as gifts. Make these about a week before you want to serve them as they mellow and the sharp strong alcohol taste blends in more with the other ingredients. Store in a tin with a tight lid. This year I couldn't find the Vanilla wafers so I used chocolate and I like them even more. To form the balls I use two teaspoons as the dough is quite moist. I store them in the freezer - they don't go hard and they are so good ice cold

Steps:
- Sift the cocoa with 1 cup sugar.
- Stir in the spiced rum mixed with the syrup.
- Add crushed vanilla wafers and nuts.
- Mix thoroughly.
- Shape mixture into walnut sizes balls and dredge with remaining sugar or leave them plain.
- Store in a tin.
BOURBON (OR RUM) BALLS
Southern Christmas treat! As hard as it may be to not eat them immediately, the balls get better after they sit for a day or two.

- In a large bowl, stir together vanilla wafers, confectioners sugar, pecans, corn syrup, cocoa and bourbon (rum) until thoroughly combined.
- Shape into 1 inch balls.
- Pour granulated sugar in a pie plate then roll balls in the sugar.
- Store in an airtight container for up to 2 weeks.
- DOES NOT FREEZE WELL!

BOURBON BALLS
I make these for Christmas presents, and for my husband when he gets the cravings for them. Everyone loves them and it's the first thing they ask me at Christmas. "Are you making the Bourbon Balls?" This is one of my biggest requests.

Steps:
- Mix the whole pound of sugar and butter together.
- Add Bourbon and pecan chips, then add extra powdered sugar to your mixture till you are able to roll into balls easily. I usually add up to an extra 1/2 pound, depends.
- I usually have to let them sit in the fridge for an hour before I roll them, that all depends on how much extra powdered sugar I add.
- Roll into balls. Put back in the fridge to harden 1 hour or until you get your chocolate melted.
- Melt Chocolate Chips and Parrifin wax in double boiler. Use milk chocolate or semi sweet chips, whatever your taste. Milk Chocolate can be very sweet. As for the wax, add enough wax to make the chocolate thin and coat easily. 1 package of Chips should coat all the bourbon balls.
- Dip balls in chocolate, let set up on wax paper.
- These get better with age. My husband says they are great after they've sat a week. They get stronger tasting as they sit.

BOURBON BALLS
This recipes comes from my aunt. These are wonderful cookies for the adults during the holidays! You can substitute other liqueurs for the bourbon, such as brandy, rum, or Kahlua (Kahlua balls are scrumptious)! You can also substitute walnuts for the pecans if you'd like.

- Finely crush vanilla sugar wafers in a food processor and measure out 3 cups worth.
- Finely crush 1 cup of whole pecans in a food processor.
- Mix wafers, nuts, powdered sugar, and cocoa.
- Stir in bourbon and corn syrup.
- Using a teaspoon to help gather mixture for each ball, shape mixture into 3/4" to 1" balls.
- Rolls balls in powdered sugar. I do this by dropping batches of the balls into a ziplock bag with a bit of powdered sugar in it. Refill some sugar into ziplock bag as needed.
- Refrigerate in tightly covered containers several days before serving (though they are very yummy right away!).
- Makes about 5 to 8 dozen balls.

CREAMY RUM BALLS
The same friend that gave me the yummy apricot balls recipe makes this one also. Not too rummy, adjust taste to your own liking. Can also be frozen and eaten from freezer.

- Mix together all ingredients.
- Roll into small balls.
- Roll in coconut.
- Refrigerate.
- Can be frozen.

- Instead of sponge cake you can use any sweet biscuit similar to Marie.
