CHUNKY CHICKEN SALAD
Simple to prepare chicken salad that I make up for sandwiches. We never have left-over chicken, so I microwave chicken just to make this. Very basic but very good! P.S. Celery is listed as optional because my husband hates it...if I am only making this for him, I leave it out! :)

Steps:
- In a medium bowl, combine mayo, onions, relish and 2 dashes or so of paprika.
- Add chicken and fold into mayo mixture until well combined.
- Taste and then add salt and pepper as needed.
- Chill well and serve over lettuce or on your favorite bread.
- Note: I microwave 2 boneless chicken breast halves sprinkled with salt, pepper, Italian seasoning, garlic powder and onion powder for 5- 6 minutes for this salad.
- If you are using left-over chicken, you may need to adjust the seasonings in the ingredients list.

This basic chicken salad is a family favorite. I like to use baked thighs or breasts that have been sprinkled with basil or rosemary.

- Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
- In a medium bowl, mix together mayonnaise, lemon juice, and pepper. Toss with chicken, almonds, and celery.

TARA'S SWEET AND CHUNKY CHICKEN SALAD
A sweet, but healthy chicken salad. The sweet secret is dried cranberries. Awesome on homemade bread or on crackers. I spread cream cheese on the bread or crackers, and top with chicken salad.

JUNIOR'S WHITE MEAT CHICKEN SALAD
Whenever in NYC, I always try to cross the bridge to Brooklyn and eat at Junior's on the corner of Flatbush and Dekalb. I was fortunate to come across this recipe for their chicken salad. It's great for making sandwiches on thick slices of white or Challah bread, or simply serve as a salad on curly lettuce leaves. P.S. You haven't lived until you've tried Junior's cheesecake, the best in the world.

- To cook the chicken: Fill a large saucepan half full with water. Add a few celery leaves, if you wish, plus the salt and white pepper, and bring to a boil over high heat. Slide in the chicken breasts, reduce the heat to medium-low, and simmer until the chicken turns opaque and the juices are no longer pink, about 8 minutes. Transfer the chicken to a colander with a slotted spoon, and rinse with cold water. Pat the chicken dry with paper towels and cut into 3/4-inch chunks (please don't shred the chicken).
- Place the chicken chunks into a medium-sized bowl and sprinkle with the lemon juice and toss well. Add the diced celery and dill and toss again.
- Mix all the ingredients for the dressing in a small bowl. Spoon the dressing over the chicken mixture and stir until all of the chicken and celery are coated.

- Boil chicken until done. Remove from stove and set aside to cool out of the stock. In the meantime, chop all of the other remaining ingredients. - In a large resealable plastic bag, combine the first six ingredients; add chicken. Seal bag and turn to coat. CHUNKY BARBECUED CHICKEN SALAD PETERSON
Steps:
- In a large bowl whisk together barbecue sauce and mayonnaise. Wearing rubber gloves, finely chop chipotle and whisk into dressing.
- Discard bones from chicken and cut meat into 1/2-inch pieces. Finely chop enough onion to measure 1/3 cup. Finely chop bell pepper and cilantro separately and add to dressing with chicken and onion, stirring to combine well. Season salad with salt and pepper.

- Place chicken in saucepan and pour enough water over to cover. Set on medium heat and bring to a boil. Reduce heat and simmer until chicken is cooked through - (approx 10 mins).
- Drain and cut into 5cm/2-inch pieces.
- Meanwhile, in a large bowl, mix together mayo, red peppers, celery, parsley, mustard, oregano, and black pepper.
- Add chicken to mayo mixture and mix well.
- remove tops of buns and press down centre to create a bowl
- spoon chicken into prepared buns - 1/2 cup per bun.
