HOLIDAY CRANBERRY SAUCE
This recipe was given to me by a friend of mine. It has been a family favorite for over ten years. I make it for Thanksgiving as well as Christmas dinner.

Steps:
- Place fresh cranberries and water in a medium saucepan over medium heat.
- Wrap cloves, allspice berries and cinnamon sticks in a spice bag. Place in the water with cranberries.
- Cook until cranberries begin to burst, about 10 minutes.
- Stir in sugar and reduce heat to low. Continue cooking 5 minutes, or until sugar has dissolved. Remove from heat and allow to cool. Discard spice bag. Chill in the refrigerator 8 hours, or overnight, before serving.

SPICED APPLE CRANBERRY SAUCE

- Bring to a boil over high heat, then reduce the temp to medium-low and simmer until the berries have burst and the mixture has thickened, about 10-15 minutes.
- Let cool and serve.

- Combine cranberries, sugar, water, orange peel and kosher salt in a heavy medium saucepan.
- Add cinnamon, allspice, cloves, and nutmeg.
- Bring to boil, stirring often.
- Reduce heat to medium low and simmer until most of cranberries burst, stirring occasionally, about 10 minutes.
- Transfer sauce to medium bowl.
- Cool to room temperature.
