BANANA-CINNAMON BUNDT CAKE

Steps:
- Heat oven to 350°F Grease 12-cup bundt cake pan with shortening; lightly flour.
- Beat cake mix, water, bananas, butter, cinnamon and eggs in large bowl with electric mixer on low speed for 30 seconds. Increase speed to medium for 2 minutes, scraping the bowl occasionally. Stir in walnuts.
- Pour into bundt pan and bake for 43-53 minutes or until toothpick comes out clean. Cool in pan for 10 minutes. Turn pan upside-down onto wire rack or heatproof serving plate and remove pan.
- Cool completely. Once cool drizzle Cinnamon Glaze over cake.
- Cinnamon Glaze: Stir all ingredients together until thin enough to drizzle. Sprinkle top with cinnamon for presentation.

BANANA CAKE WITH CREAM CHEESE FROSTING

- For the banana cake: Preheat the oven to 350 degrees F. Grease and flour a 9-inch round cake pan.
- In the bowl of an electric mixer, combine the butter, brown sugar and granulated sugar. Mix on medium-high speed until light and fluffy, about 5 minutes.
- Meanwhile, sift the flour, baking soda, baking powder, cinnamon and salt into a medium bowl. Set aside.
- Add the bananas to the butter mixture and mix until combined. Let the mixer do the work of mashing for you. Add the eggs one at a time and mix until well combined. Mix in the yogurt and vanilla. Turn the mixer to low and add the dry ingredients until just combined. Do not overmix.
- Pour the batter into the prepared cake pan. Bake until a cake tester or toothpick comes out clean, 45 to 50 minutes. Cool in the pan for 5 to 10 minutes, then turn onto a wire rack and cool completely.
- For the cream cheese frosting: Using the electric mixer on high speed, blend the cream cheese and butter until light and fluffy, 4 to 5 minutes. With the mixer on low, add the confectioners' sugar and then the vanilla.
- Spread the frosting on top of the cake. Decorate around the perimeter of the cake with raspberries, if desired.

- Mix the flours and salt together in a large bowl, then stir in the caster sugar and yeast. Make a well in the centre of the flour and pour in the warm milk, beaten egg, olive oil and enough of the water to form a soft, wet dough.
- On a lightly floured surface, knead dough for 10 mins until smooth. Put the dough in a lightly oiled bowl, cover with oiled cling film, then leave to rise in a warm place until doubled in size. The dough is now ready to be shaped.
- Lightly butter two 20cm square baking tins. On a floured surface, roll half the dough into a rectangle approximately 30cm x 25cm and brush with melted butter. Repeat with the other half.
- Thinly slice bananas into a bowl and mix in apricots, muscovado sugar, cinnamon and orange zest. Spoon mix over the two rectangles of dough, leaving a finger-width border.
- For each, roll the dough towards you from the long side of the rectangle, tucking in any banana that falls out. Press ends together to seal. With a sharp knife, cut into 9 pieces and place, cut side up, in the tin, just touching each other. Cover loosely with oiled cling film and set aside in a warm place to rise for 30 mins.
- Heat oven to 200C/fan180C/gas 6. Warm the honey in a pan or in the microwave on High for 5 secs, then brush half over the buns. Bake for 20-25 mins until golden. Allow to cool in the tin for 10 mins before removing to a cooling rack. Brush with the remaining honey then pull apart to serve.

- Heat oven to 180C/160C fan/gas 4 and lightly grease a deep 23cm round cake tin, lining the base with baking parchment.
- To make the topping, put the butter and sugar in a small saucepan and cook over a medium heat until melted and combined. Add the vanilla and mix together. Pour the caramel into the cake tin and spread in an even layer. Cut the bananas in half lengthways and arrange on top of the caramel, cut-side down.
- To make the batter, put all the ingredients in a large bowl with 1/4 tsp salt. Use an electric mixer to beat together on a low speed until the batter is smooth and evenly mixed. Pour the batter on top of the bananas and level out with a spatula. Bake in the oven for 55 mins-1 hr or until a skewer inserted in the middle comes out clean. If the cake begins to look too dark, cover with foil after 45 mins. Allow to cool in the tin for 10 mins before turning out onto a plate. Best served warm but also delicious at room temperature. Best eaten within 2 days.

- preheat oven to 160 C.
- line an 18 - 20cm cake pan with baking paper, ensuring it is 3cm higher than the rim of the pan.
- sift the flour, cinnamon, bp and bs into a large bowl.
- in a separate bowl whisk vanilla, eggs, oil and sugar until light and fluffy. add to dry ingrediants together with bananas and sour cream.
- mix until just combined, pour into cake pan, bake 1 1/2 hr or until skewer comes out clean.
- cool on a wire rack.
- ice with cream cheese icing and dust with cinnamon.
