CINNAMON GRAHAM CRACKER CRUST
Originally from the Fanny Farmer Baking Book. I use it for my Lemon Meringue and Key Lime Pies. I don't usually add the cinnamon but it is an option.

Steps:
- Combine cracker crumbs and sugar in a bowl, then add the butter and optional cinnamon.
- Stir with a fork until crumbs are moistened.
- Empty the mixture in the pie plate, then pat and press mixture evenly all around the bottom and sides of the plate.
- Before filling, either bake in a preheated 350°F oven for 8-10 minutes or chill for about an hour.
- (You simply want the crust to be firm and both baking and chilling will do that, although I prefer baking.).
CINNAMON AND SUGAR GRAHAM CRACKERS
Graham crackers are surprisingly easy to make. Use this recipe to make our Marshmallow Cookie Sandwiches.

Steps:
- Preheat oven to 350 degrees. Whisk together flours, baking soda, baking powder, cinnamon, and 1/4 teaspoon salt. Beat butter and sugar with a mixer on medium speed until pale and fluffy. Mix in egg. Add flour mixture, and mix to combine.
- Divide dough in half. Roll out each dough half to 1/8-inch thickness on a lightly floured surface. Refrigerate until firm, about 30 minutes.
- Cut out eighteen 2 1/2-inch-square crackers, using a fluted cookie cutter or a knife. Transfer to baking sheets, spacing 1/2 inch apart.
- Bake, rotating sheets halfway through, until golden brown, about 10 minutes. Transfer sheets to wire racks, and let cool.
HOMEMADE GRAHAM CRACKERS
These are so much fun to make. You don't just have to stick with squares and rectangles, get creative with shapes and cookie cutters.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a large baking sheet. Whisk together the flour, baking powder, and cinnamon in a bowl; set aside.
- Use an electric mixer to beat the butter and brown sugar together until light. Stir in the flour mixture. Slowly pour in the water; stir until dough is formed. Refrigerate dough for 30 minutes.
- On a well floured board, roll dough to between 1/8 and 1/4 inch thick. Use a knife or cookie cutter to cut dough into squares or rectangles. Transfer crackers to prepared baking sheet.
- Bake in preheated oven until light brown, 11 to 13 minutes. Remove crackers from oven. Use a fork to pierce multiple holes on tops of crackers.

CINNAMON CRUNCH BARS
These tasty bars are wonderful for gift-giving and very easy to make too!

- Preheat the oven to 400 degrees F (200 degrees C). Grease a 10x15 inch jellyroll pan.
- Arrange cinnamon graham crackers with sides touching in a single layer to cover the bottom of the pan. Sprinkle the walnuts evenly over the crackers. In a small saucepan over medium heat, combine the brown sugar, butter and cinnamon. Cook stirring constantly until the mixture begins to boil. Continue to boil the syrup for 3 minutes without stirring. Remove from heat and pour over crackers.
- Bake for 8 to 10 minutes in the preheated oven, until bubbly and slightly darker around the edges. Cool completely in the pan. Break into pieces and store in an airtight container at room temperature.

CINNAMON GRAHAM CRACKER CAKE
Unlike the others! A cream cheese icing... YUM! Omit the walnuts if you want. I have not made this yet; please rate and review. :) From the back of a graham cracker box.

Steps:
- Preheat oven to 325 degrees F.
- Grease and flour a 9x13 inch glass baking dish. Mix graham cracker crumbs with flour and baking powder. Set aside.
- Cream sugar and butter until light and fluffy. Add yolks, vanilla, and cinnamon.
- Add flour mixture to creamed mixture alternatively with milk.
- Stir in nuts, if using.
- Spread into prepared pan.
- Bake for 20 to 25 minutes, or until toothpick inserted into cake comes out clean. Cool completely.
- To make icing: Cream together the softened cream cheese and butter until smooth. Add powdered sugar and mix well. Add vanilla then spread evenly over cooled cake.
- Refrigerate any leftovers.
