CITRUS-SOY GLAZED BLACK COD

This recipe for citrus-soy glazed black cod makes a light and satisfying meal.

Citrus-Soy Glazed Black Cod image

Steps:

  • Preheat oven to 425 degrees. Spray a baking dish with cooking spray. Season fish with salt and pepper and place in prepared dish.
  • Meanwhile, add brown sugar, lime juice, vinegar, soy sauce, and pinch of salt to a small saucepan and bring to a boil over medium heat. Simmer until thick and syrupy, 4 to 5 minutes. Spoon about 1 teaspoon of glaze evenly over each cod filet; reserve any remaining glaze.
  • Transfer baking dish to oven and bake until opaque and just cooked through, about 12 minutes. Garnished with mint and scallions; serve with reserved glaze.

4 (6-ounce) center-cut black cod fillets
Coarse salt and freshly ground pepper
2 tablespoons light-brown sugar
3 tablespoons freshly squeezed lime juice
2 tablespoons rice vinegar
1 tablespoon soy sauce
Thinly sliced mint leaves, for garnish
Thinly sliced scallions, for garnish

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish lightly with cooking spray.
  • Place salmon fillets in the baking dish.
  • Mix lemon juice, orange juice, lime juice, butter, parsley, paprika, salt, and pepper together until well blended. Drizzle over salmon in the baking dish.
  • Bake salmon in the preheated oven until easily flaked with a fork, 10 to 15 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

Steps:

  • Salad: Combine all ingredients.
  • Place the citrus juices in a saucepan and stir over medium heat until it is reduced by 1/2. At that point set it aside. Bring the sake to a boil, dissolve in the maple syrup, let this cool. Once it is cool, take the 4 fillets Sablefish, place in a non-reactive deep dish pan, or small pan and cover with the sake/maple syrup mixture and marinate this for 24 hours, refrigerated.
  • Take the Sablefish out of the marinade. On a damp cloth simply spot the fish and then, on a large cookie sheet lined with either parchment paper or waxed paper, place the fish skin-side up and flesh-side down, bake in preheated 375 degree oven for 10 minutes, then remove from heat.
  • Quickly bring the orange, grapefruit and lemon juice to a boil, stir in the butter until dissolved. Add soy sauce. Check for seasoning. In 4 individual bowls equally divide the orange segments, grapefruit segments and lemon segments, place some of the soy and orange sauce in the bowls, place the fish on the top of the citrus, the salad on top of the fish and serve immediately.

  • Microwave Directions: Sprinkle sablefish with salt and pepper.
  • Combine lemon juice and oil in microwave proof baking dish; turn fish to coat both sides with lemon juice mixture.
  • Arrange onion slices over fish.
  • Cover with plastic wrap; microwave at medium 4 minutes.
  • Remove cover and arrange orange slices over onion; sprinkle with parsley and cover.
  • Rotate dish 1/4 turn; microwave at medium 3 to 4 minutes longer or until sablefish flakes easily when tested with a fork at thickest part.
  • Oven Directions: Sprinkle sablefish with salt and pepper.
  • Combine lemon juice and oil; brush on all sides of sablefish.
  • Place fish in baking dish and arrange onion slices over fish; brush with remaining lemon-oil mixture.
  • Bake at 400ºF, 5 minutes.
  • Arrange orange slices over onion; sprinkle with parsley.
  • Bake 5 to 8 minutes longer or until sablefish flakes easily when tested with a fork at thickest part.
  • Recipe can be halved or doubled.

  • In a large resealable plastic bag, combine the orange juice concentrate, oil and dill; add fish. Seal bag and turn to coat; refrigerate for at least 15 minutes. , Drain and discard marinade. Steps:

  • Heat oven to 400 degrees F.
  • Sprinkle fish with teaspoon salt and pepper.
  • Place fish in glass baking dish.
  • Cut one half onion into thin slices.
  • Cut 4 thin slices from half of lime.
  • Arrange lime and onion slices on each fillet.
  • Bake fillets 12 to 15 minutes, or until just cooked.
  • Meanwhile, peel and remove white pith from oranges; cut into segments, then cut each segment in half.
  • Transfer orange pieces to small bowl.
  • Mince remaining onion half and squeeze 1 tablespoon lime juice from remaining lime half; add to orange pieces with avocado, jicama, cilantro, jalapeño, and remaining 1/8 teaspoon salt.
  • You can make this sauce earlier in the day and keep it refrigerated until dinner.
  • Serve with baked fish.
