CITRUS BALSAMIC MARINADE

You can use this for beef or chicken, but I use it for chicken mainly. It makes delicious, juicy chicken! Enough marinade for about 3 lbs. of meat. Source: Lea and Perrins

Citrus Balsamic Marinade image

Steps:

  • Combine all ingredients.
  • I stab the chicken breast a few times with a fork, then place in a ziploc bag.
  • Pour the marinade over, and let marinate for 3-4 hours Longer, if you have the time.
  • Grill meat as desired.

1/3 cup lemon juice
1/4 cup Worcestershire sauce
3 tablespoons balsamic vinegar
1 tablespoon olive oil
1 1/2 tablespoons minced garlic (I use the jar stuff)

BALSAMIC MARINADE

This marinade is specifically for red meat or vegetables. It can be made up to a week in advance of use provided it is stored in an airtight container in the refrigerator. Fresh herbs such as rosemary, oregano or marjoram can be added if desired.

  • Whisk together all ingredients in a bowl.

2 garlic cloves, crushed
1 tablespoon dried thyme or 2 tablespoons fresh thyme, chopped
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon Worcestershire sauce
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil

Carla's Citrus Marinade image

Steps:

  • Thinly slice garlic and in a small saucepan cook in oil over moderately low heat until it just begins to turn golden. Remove pan from heat and with a slotted spoon discard garlic.
  • Into oil in pan stir in remaining ingredients and salt and pepper to taste and cool marinade.

  • I put all the above dressing ingredients into a jar with a lid and shake.
  • Use as needed.
  • Refrigerate leftovers to use within one week.

  • First, zest one teaspoon of both the lime and lemon. Set aside in a small bowl. In another small bowl, combine the fresh lime, lemon and orange juice. In a blender or food processor, combine all ingredients (yes everything) and pulse until a uniform puree forms.
  • Pour marinade into a large plastic bag (I always double-up just in case of leaks!). Add chicken, seal bag, and turn to coat. Allow chicken to marinate for at least 20 minutes, or overnight (be sure to keep chilled in the refrigerator).
  • Once ready, cook according to appropriate cooking time and method (this will vary between thighs and breast). In our case, we decided to cook our chicken breasts on the grill.
  • For the grill- prepare the grill for direct cooking over medium-high heat (350-450 degrees). Remove the chicken from the bag and discard remaining marinade. Grill over direct medium heat with the lid closed until the meat is no longer pink in the middle, 10-15 minutes, turning once (we have fairly thick chicken breasts, so cooking times may vary). Remove from the grill and allow 3 to 5 minutes for the chicken to rest and cool.
