TERIYAKI SALMON
Salmon is a favorite of my husband. This recipe never fails to be a hit, whether we broil the salmon in the oven or grill it outdoors. Pair it with some homemade teriyaki fried rice to complete your meal.

Steps:
- Mix sesame oil, lemon juice, soy sauce, brown sugar, sesame seeds, ground mustard, ginger, and garlic powder in a small saucepan over low heat. Bring to a simmer, stirring until sugar has dissolved. Set aside 1/2 cup of marinade for basting.
- Pour remaining marinade into a resealable plastic bag and place salmon into the marinade. Squeeze air out of the bag, seal, and marinate the salmon steaks for at least 1 hour (2 hours for better flavor). Drain and discard used marinade.
- Set oven rack about 4 inches from the heat source and preheat the oven's broiler. Place salmon steaks into a broiler pan and broil for 5 minutes. Brush steaks with reserved marinade, turn, and broil until fish is opaque and flakes easily, about 5 more minutes. Brush again with marinade.

CITRUS TERIYAKI SALMON
Teriyaki salmon is a traditional Japanese dish - this recipe adds some citrus tang to it. I've also made this recipe substituting pink grapefruit juice cocktail for some of the orange juice (about 2/3 cup orange, 1/3 cup grapefruit). Last time I made this, I served it with Julesong's Brown Rice with Onions and Pecans and edamame (soybeans boiled in the shell). Prep time includes marinating time

Steps:
- Combine orange juice, ginger, onion, teriyaki, lime juice, and garlic, and mix well.
- Marinate salmon in mixture for at least 3 hours.
- Grill or broil salmon.
- While salmon is cooking, strain solids from the remaining marinade, and heat in a small saucepan.
- Bring the marinade to a boil and cook 5-10 minutes.
- Spoon the sauce over the salmon and serve.
TRIPLE CITRUS GLAZED GRILLED SALMON

- Glaze: Bring all of the ingredients to a boil in a medium-sized saucepan over medium heat, stirring to melt the preserves and to keep the mixture from burning. Reduce the heat to a simmer and let the glaze reduce until syrupy, about 15 to 20 minutes. Adjust the seasonings with salt and freshly cracked pepper, to taste.
- Salmon:
- Heat a grill to medium-high heat.
- Brush both sides of the fillets with olive oil just before grilling, then season with salt and pepper, to taste. Grill the salmon for about 4 minutes per side, brushing with the glaze during the final few minutes of cooking. Transfer the salmon to serving plates and brush them with the remaining glaze before serving.
CITRUS GRILLED SALMON

- Low-Sodium Recipe
- 1. Preheat oven to 375 degrees F.
- Spray a 9 x 9 x 2 inch pan with cooking spray.
- 2. Lay fish in pan. Coat each fillet with Mrs. Dash® Lemon Pepper Seasoning Blend.
- 3. Alternate slices of lemon and orange on top of fish. Sprinkle fish with wine.
- 4. Place in the oven for 5 minutes. Turn oven to 325 degrees F and continue to cook 5 minutes. Rest 3-4 minutes before serving.
CITRUS BAKED SALMON
Steps:
- Preheat the oven to 375 degrees F.
- In a large 9 by 13 shallow baking dish place 1 lemon slice with 1 orange slice side by side so you'll end up with 4 groups. Each salmon fillet will have its own bed of citrus. Season each fillet with salt and pepper then place each salmon fillet over the 2 slices of lemon and orange. In a small bowl mix the dill, sun-dried tomatoes and tomato oil. Divide mixture on top of the salmon fillet, then drizzle with the wine. Place the baking dish in the oven and cook for 8 to 10 minutes.
POACHED TERIYAKI SALMON

- In a large nonstick skillet or electric skillet, bring orange juice and teriyaki sauce to a boil. Place salmon fillets in skillet; top each with an orange slice. Return to a boil. reduce heat; cover and simmer for 15-20 minutes or until fish flakes easily with a fork. Remove fillets and keep warm., Strain cooking liquid; return 3/4 cup to the skillet. Combine cornstarch and water until smooth; add to cooking liquid. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve over salmon.

CITRUS GRILLED SALMON
I grow my own oranges, so I wanted to try a main dish recipe where the citrus flavor really comes through. It's definitely one of our favorite recipes.

- In a small bowl, combine the first five ingredients. Pour 2/3 cup into a large bowl; add salmon. Turn to coat; cover and refrigerate for at least 2 hours. Cover and refrigerate remaining marinade., Drain and discard marinade. These looked so nice and so easy that I decided to post it before I forgot about it. Thawing time is 40 minutes - if salmon is frozen and for the puffed pastry. - Heat the oven to 400°F
- Place the salmon into a medium bowl.
- Add the lemon juice and 2 tablespoons teriyaki sauce and toss to coat.
- Unfold the pastry sheets on a lightly floured surface.
- Cut each pastry sheet into 16 (1/2-inch wide) strips crosswise, making 32 in all.
- Cut each strip in half crosswise, making 64 in all.
- Place 2 strips on a baking sheet to form a cross shape.
- Repeat with remaining strips.
- Place 1 piece salmon in the center of each pastry cross.
- Fold the ends of the pastry cross over the filling and press to seal.
- Turn the pastries seam-side down on the baking sheets.
- Bake for 20 minutes or until the pastries are golden brown.
- Stir the marmalade, remaining teriyaki sauce and red pepper flakes in a small bowl.
- Serve the pastries on 3-inch wooden skewers with the marmalade mixture for dipping.

- Begin to heat sesame oil in a saute pan. Add garlic and ginger and lightly saute.
- Add orange juice and bring to a simmer. Add teriyaki sauce and brown sugar. Bring to a simmer and hold for 5 minutes at the simmer.
- In a small bowl, mix cornstarch and water thoroughly. Mix into teriyaki mixture slowly, stirring with a wire whisk.
- Continue to cook until just thinner than gravy. Serve over meat of your choice. Top with sesame seeds.
- For the chicken fritters, toss lightly.

- Heat to a mild boil. Stirring frequently cook 5-10 minutes to reduce to a glaze.
- Serve over salmon, chicken or pork.
- You can mix ingredients together and use as a marinade for salmon, chicken or pork. Marinate for three hours. Make sure you reserve some to cook for a glaze later.
