Steps:

  • In a small bowl, beat cream cheese. Add the cheddar cheese, chiles, olives, onion and hot pepper sauce. Separate each tube of crescent dough into 4 rectangles; press perforations to seal., Spread cheese mixture over dough. Roll up jelly-roll style, starting with a long side. Cut each roll into 10 slices; place on greased baking sheets. Bake at 400° until golden brown, 8-10 minutes.

Cheesy Green Chile Chicken Enchilada Casserole image

Steps:

  • Melt butter in large skillet over medium heat. Roughly chop 1 jalapeno pepper and 1 poblano pepper; add to the skillet with chicken and garlic. Squeeze lime over mixture and add lime rind to the skillet. Cook, covered, until chicken is no longer pink and juices run clear, stirring occasionally, 20 to 25 minutes. Remove from heat and let cool.
  • Meanwhile, set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place remaining jalapeno and poblano peppers onto the prepared baking sheet.
  • Cook peppers under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Lower oven temperature to 375 degrees F (190 degrees C).
  • Chop cooked chicken into small pieces and place into a bowl. Add hot peppers to the bowl, cover, and let steam for 10 minutes. Peel skin from peppers, remove seeds, and slice.
  • Place small amount of enchilada sauce on the bottom of a 9x13-inch pan, just enough to cover the bottom. Place 5 tortillas on on top. Place 1/2 of the sliced poblano and jalapeno peppers on top of tortillas. Lay out 1/2 of the chicken and 1/2 of the Mexican cheese on top of the peppers. Spoon 1/2 of the remaining enchilada sauce on top of cheese layer. Repeat layering steps. Top with chopped cilantro.
  • Bake in the preheated oven until cheesy is melted and browning, about 25 minutes.

CHEESY GREEN CHILI SNACKS

These are terrific little cheesy flat biscuit like snacks. Some people call them crackers. I do not remember where I got this recipe, but I make it quite often and they always go fast at our church gatherings. I use Louisiana hot sauce in mine, but I think any kind of hot sauce would work. I hope you like them as much as we do. They are good right out of the oven or a day or two later. I like to cook them until they are good and brown so they will get a little bit of a crunch along with the chewy. I am not sure about the serving size because these are an appetizer or snack.

Steps:

  • Pre-heat oven to 350.
  • beat butter & cheese until well blended. add green chilis, worcestershire sauce and hot sauce. graduallly add flour, you may have to use your hands at this point. mix well.
  • shape heaping teaspoonfuls of dough into balls, place onto a cookie sheet and flatten to about 1/4 inch thick. you want them pretty thin.they can be put close together because they do not spread much. bake for 18 to 20 minutes or until golden brown.

2 cups grated cheddar cheese
1/4 cup butter, at room temperature
3 tablespoons chopped green chilies
1 teaspoon Worcestershire sauce
2 -3 dashes of your favorite hot sauce
1 1/4 cups flour

Perfect for a Sunday brunch but wonderful any ol' time. Cook's Notes: This recipe can be easily doubled. It is plenty as is if there are side dishes to accompany it but may not be enough for more than 3 or 4 eaters if it is the only dish. Also, feel free to garnish with yummy things like sour cream, pico de gallo, salsa, avocado slices, etc.

Steps:

  • Preheat oven to 400 degrees.
  • Grease an 8"x12" baking dish (I use an oval dish). (Can use 9"x13" pan but frittata will not be as thick).
  • In a large bowl, beat eggs with a fork; then add flour, baking powder, salt & pepper and mix until well combined.
  • Stir in the green chills, cottage cheese, cheddar cheese and butter.
  • Pour mixture into prepared baking dish. Garnish with tomato slices (I use 3) and chopped basil leaves.
  • Bake uncovered for 15 minutes at 400 degrees. Reduce heat to 325 degrees and continue baking for about 35 minutes or until well set.
  • Serve and enjoy!

  • Put first 7 ingredients into medium bowl. Beat on medium until mixed.
  • Add cheese and green chilies. Stir. Turn into grease 8x8-inch baking dish. Bake in 350F oven for 45 to 55 minutes until set and lightly browned on top.
  • Cuts into 25 pieces.
  • Make Ahead:.
  • Bake ahead. Cool completely. Do not cut. Cover and chill for up to 24 hours or freeze for up to 6 months. Remove from refrigerator about 30 minutes before serving. Cut while still cold. Remove from freezer 1 to 2 hours before serving. Cut while still partially frozen.
  • Serving Suggestion:.

Steps:

  • Process Hellmann's® or Best Foods® Real Mayonnaise, green chilies and garlic in food processor until smooth. Remove to medium bowl, then stir in jalapeno peppers and cilantro. Season, if desired, with salt and black pepper. Cover and refrigerate at least 30 minutes.
  • Meanwhile, shape ground beef into 4 burgers. Brush each burger on both sides with oil, then season, if desired, with salt and black pepper. Grill, turning once, 8 minutes or until desired doneness. Top burgers with cheese and cook until cheese is melted. Arrange burgers on buns, then top with a dollop of green chili mayonnaise. Serve remainder of mayonnaise in small bowl for dipping.
