CREAM CHEESE FRUIT DIP
A cream cheese dip that's loved by all (unless they're counting calories)! You can substitute reduced-fat cream cheese if you wish. It's been my favorite since it was shared with me in college! Enjoy with apples, bananas, oranges, pears, pineapple, strawberries, etc.

CREAM CHEESE MANDARIN FRUIT DIP
One of my former co-workers brought this to a potluck - it was gone before the fruit was! This is a refreshing, light dip that also works as a topper for a fruit salad. It saves well in the fridge, and for best flavor should be made the night before, and chilled overnight.

Steps:
- Bring all ingredients to room temperature FIRST!
- Whip the cream cheese and marsmallow together, then fold in the drained mandarin oranges.
- Check the consistancy: if it seems thick to you, then add the reserved juice, 1/4 tsp at a time. I prefer my topping thicker, like a dip, so I only add 1/4 tsp juice.
- If you are going to mix it into the fruit salad, then you would want it thinner.
- I also prefer to put it in the fridge (covered with saran wrap) overnight. Enjoy!
MANDARIN ORANGE FRUIT DIP
I made this for New Year's Day this year and it was a hit! I found the recipe on allrecipes.com when looking for a fruit-dip recipe that didn't use pudding or marshmallow fluff. I was worried at first that the yogurt flavor over-powered the other flavors, but after chilling it it was perfect.

- Combine white sugar, water, lemon juice, and 1/8 teaspoon salt in a thick-bottomed pot; bring to a boil, stirring often. Reduce heat to low, place a cover on the pot, and cook at a simmer for 3 minutes. Remove cover and continue cooking, stirring often, until the sugar and salt dissolve into the liquid, about 3 minutes more. Remove pot from heat and set aside to cool for 5 minutes; pour syrup into a large bowl.

SOUR CREAM-CREAM CHEESE-MARSHMALLOW FRUIT DIP
This is a quick and easy dip for sliced apples, drained pineapple chunks, strawberries, kiwi fruit, mandarin orange segments, grapes, etc. Stir it up and refrigerate for about 12 hours before serving. It's rich and sweet, and just maybe you'll get someone to eat a lot more fruit if they have this dip handy. HINT: Save canned pineapple juice and use it to dip (then drain) apples and other fruit that might turn dark, so they won't discolor on the fruit platter.
