COCKTAIL MEATBALLS IN GARLIC BUTTER SAUCE

I have been searching for a cocktail meatball recipe that did not have the chili/grape-jelly sauce or the Swedish style sauce. I could not find one and experimented with a garlic butter sauce instead. They came out exactly how I wanted and tasted great.

Cocktail Meatballs in Garlic Butter Sauce image

Steps:

  • Preheat oven to 400°F.
  • Mix first six ingredients and form into cocktail size meatballs.
  • Place on Jelly Roll style pan with lip (nonstick if you have it).
  • Bake meatballs in oven for 15-20 minutes until done.
  • Melt butter in saucepan.
  • Add garlic and sauté for 1-2 minutes.
  • Stir in flour.
  • Stir in chicken broth and cook until thickened.
  • Combine meatballs and sauce.
  • Keep warm in crockpot if serving for party.
  • Notes: You can adjust the garlic, breadcrumbs, Parmesan cheese, and spices to your liking.

1 lb ground beef
1/2 cup breadcrumbs
1/2 cup parmesan cheese
1 tablespoon italian seasoning (or basil and oregano)
1 teaspoon kosher salt (or 1/2 teaspoon regular salt)
1 extra large egg (or 2 smaller)
1/4 cup butter
1 minced garlic clove (more or less to your liking)
2 tablespoons flour (1 tablespoon for thinner sauce)
1 cup chicken broth (I use College Inn)

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine all the ingredients for the meatballs, except the oil and butter. Mix well with your hands. Form into individual meatballs, about 1-inch in diameter. In a large skillet, heat the oil and the butter over medium-high heat. Add the meatballs and cook, turning until brown on all sides. Transfer to a 2 1/2 quart baking dish.
  • Make the sauce by combining all the ingredients in a medium bowl, whisking to dissolve the sugar and combine. Adjust the seasoning, to taste. Pour the sauce over the meatballs and bake until the meat is cooked through and the sauce is bubbly, 20 minutes. Remove from the oven and serve immediately.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

The secret is the simple sauce. Everyone compliments the unique taste. These are great for parties served from a chafing dish or crockpot with toothpicks but can even be served as an entre with pasta. You can even use premade frozen meatballs but they won't be as good.

Steps:

  • Combine first nine meatball ingredients well and let rest in refridgerator for min 30 minutes.
  • Roll into meatball shapes (small for cocktails and med-large for entres).
  • Heat oil and brown in skillet over medium heat stirring to brown on all sides. Brown in batches so pan is not crowded and they can brown and not steam. Small meatballs will cook though in about 10 mins (larger ones will obviously take a little longer). You could also brown on oiled sheet pan in 350 degree oven turning every five minutes until browned and cooked through (approx 20 mins).
  • For sauce.
  • Combine ketchup, sherry and oregano and pour over browned meatballs. Heat until sauce simmers and meatballs are warmed through.
  • Serve in a lighted chafing dish (or crockpot) for cocktail party with toothpicks.
  • Meatballs in sauce can be frozen and simply warmed in microwave or stovetop.
